About Darling
Darling is a chef-driven restaurant and wine bar on Whyte Avenue, known for its creative, ingredient-focused menu and warm, intimate atmosphere. We showcase the best of each season through locally sourced ingredients and globally inspired dishes.
The Role
The Sous Chef plays a key leadership role in supporting the Head Chef with the daily operations of the kitchen. You'll help execute Darling's menu, mentor kitchen staff, and ensure a consistently high standard of food quality, presentation, and organization.
Key Responsibilities
- Support the Head Chef in the execution of all menus and daily operations
- Assist in developing new menu items, recipes, and seasonal dishes
- Direct and delegate tasks within the kitchen to ensure efficient service
- Ensure all food is prepared and served according to Darling's recipes, portions, and quality standards
- Maintain high morale and a positive kitchen culture; respond to conflicts calmly and effectively
- Supervise, motivate, and work closely with kitchen staff, fostering teamwork and consistency
- Support daily cooking, prep, and plating as needed
- Oversee storage, inventory rotation, and product ordering to minimize waste and spoilage
- Ensure food safety, sanitation, and cleanliness standards are met and maintained at all times
- Check the quality and quantity of incoming products and delegate appropriate storage
- Maintain kitchen equipment through daily checks and preventive maintenance routines
- Assist in training, development, and onboarding of kitchen team members
- Remain composed and professional under pressure, ensuring the team is supported during busy service periods
- Respond to guest requests or issues with a solutions-focused mindset that aligns with Darling's standards of hospitality
- Execute administrative and operational tasks as required
- Occasionally perform physical activities that require moderate strength, including lifting, standing, and handling kitchen equipment
- Contribute to a positive, collaborative work environment focused on excellence and respect
What We're Looking For
- Proven experience as a Sous Chef or senior line cook in a quality-driven kitchen
- Strong leadership, communication, and organizational skills
- Passion for local, seasonal, and sustainable ingredients
- Ability to work collaboratively in a fast-paced environment
- Knowledge of food safety and sanitation standards
- A calm, solution-oriented approach to problem-solving
- Creativity, initiative, and a desire to grow within the role
