Scran & Dram, a community-focused pub offering house-made Scottish & Canadian comfort fare, is hiring for a Head Chef
The Scran & Dram Head Chef will ensure the best possible culinary experience for customers, with particular emphasis on using fresh, local ingredients and traditional cooking methods. The Head Chef, with support from the Sous Chef, will ensure all day-to-day kitchen and culinary responsibilities are being executed and delivered by team members. They will also ensure the best possible culinary standards are fully implemented with particular emphasis on building a highly professional, efficient, and motivated kitchen team.
**This position is eligible for a comprehensive benefit program, weekly tip out, bonuses, and two weeks paid vacation per year.**
**Hours of work**: 44 hours per week. Restaurant locations are seven days a week operations. This position therefore requires flexibility and evening, weekend, and stat holiday work. Schedules and hours will vary depending on business requirements and time of year. Weekend coverage will be shared and coordinated between kitchen managers.
**Accountabilities**:
- Support business in achieving budgeted culinary targets, i.e. food & labor costs
- Collaborate with owners & managers with respect to revenue generating and cost saving ideas
- All menu & recipe development with focus on providing an incredible food experience
- Implement and lead the highest possible culinary standards and systems
- Execute labor management and scheduling efficiencies
- Attract world-class local talent as well as identify internal potential
- Collaborate with all Clan Gathering managers regarding in-house culinary development, training, marketing, health & safety, hospitality programs, events, etc.
- Lead by example to create a passionate kitchen culture and overall positive work environment
- Consistently analyze and improve overall food quality and execution by staying engaged in Waterloo Region’s food scene and researching Scottish culinary dishes and trends
- Bring passion to the kitchen every day and inspire other team members
- Set and evolve culinary standards and systems
- Teach and coach the kitchen team members
- Manage food safety and training support
- Act as manager on duty for entire restaurant staff when appropriate
- All other duties as assigned
**Required qualifications**:
- Basic food handlers certification
- WHMIS certified
- Red Seal certification or equivalent experience
- Hard worker with the potential to work over 10 hours shifts as required
- Minimum 5 years kitchen experience w/ 2 years management experience
- Excellent communication and organizational skills; ability to interact professionally and diplomatically
- Excellent customer service skills with a friendly, courteous, and positive attitude
- Passion for exceeding culinary expectations and crafting high-quality food from local ingredients
