**Responsibilities**:

- Create a sushi menu that includes different ingredients and raw fish, such as
salmon, tuna, unagi and other;
- Prepare all types of sushi, including maki, nigiri and sashimi;
- Slice and present sashimi in its various forms, i.e. rolls, temaki, nigiri, sashimi,
futomaki;
- Add additional flavors to sushi rolls with ginger, rice vinegar, wasabi and soy
sauce, when appropriate;
- Prepare Japanese appetizers, soups and salads;
- Fillet fresh fish suitable for sushi consumption;
- Bake Japanese deserts from scratch;
- Make sushi rice;
- Make Japanese sushi sauces;
- Supervise kitchen staff and helpers;
- Organize and manage buffets and banquets;
- Order supplies and equipment;
- Manage kitchen operations;
- Inspect kitchens and food service areas;
- Maintain inventory and records of food, supplies and equipment;
- Prepare and cook complete meals or individual dishes and foods;
- Plan menus, determine size of food portions, estimate food requirements and
costs, and monitor and order supplies;
- Train staff in preparation, cooking and handling of food;
