**Position Overview**:
We are seeking an ambitious and dedicated Assistant Sushi Chef who is passionate about Japanese cuisine and eager to refine their skills. This is a rare opportunity to train under a seasoned Head Chef while playing a pivotal role in the success of a new and exciting culinary destination.

**Key Responsibilities**:

- Assist the Head Chef in preparing and executing the omakase menu, including sashimi, nigiri, and seasonal dishes
- Perform tasks such as slicing fish, preparing rice, and handling premium ingredients like Uni, Toro, and Wagyu
- Maintain the highest standards of cleanliness and food safety in the kitchen
- Collaborate with the culinary team to ensure smooth and efficient operations
- Participate in daily prep work, ingredient inventory, and quality control
- Provide occasional support for guest interactions during service at the sushi counter

**Qualifications**:

- Previous experience in sushi preparation or Japanese cuisine is an asset (fine dining experience preferred)
- Strong knife skills and familiarity with traditional sushi-making techniques
- Eagerness to learn and adapt to innovative techniques and seasonal ingredients
- Attention to detail, cleanliness, and quality
- Ability to work under pressure in a fast-paced environment
- Team-oriented mindset with excellent communication skills
- Knowledge of Japanese language is an asset but not required
