Culinary Team Member

We are recruiting for an Executive Culinary Assistant to join our team. The successful candidate will work closely with the winery chef to prepare and execute daily food service and private events.

Responsibilities:
  1. Preparation of meats, seafood, poultry, vegetables, and other food items for cooking in broilers, ovens, grills, fryers, and various kitchen equipment.
  2. Daily opening, closing, and cleaning duties as requested by the winery chef.
  3. Maintenance of standard portion sizes, cooking methods, quality standards, and kitchen rules, policies, and procedures.
  4. Stocking and maintaining sufficient levels of food products at line stations to ensure smooth service periods.
  5. Portioning food products prior to cooking according to standard portion sizes and recipe specifications.
  6. Sanitation and cleanliness of workstation areas, including tables, shelves, grills, broilers, fryers, pasta cookers, sauté burners, convection oven, flat top range, and refrigeration equipment.
  7. Proper plate presentation and garnish setup for all dishes.
  8. Proper handling, storage, and rotation of all products.
  9. Assistance in food prep assignments during off-peak periods as needed.
  10. Closing the kitchen properly and following the closing checklist for kitchen stations. Assistance in closing the kitchen as required.
  11. Attendance at all scheduled employee meetings and contribution of suggestions for improvement.
  12. Performance of other related duties as assigned by the Estate Chef or manager-on-duty.
Requirements:
  • A minimum of 2 years of experience in kitchen preparation and cooking.
  • At least 6 months of experience in a similar capacity.
  • Effective communication with managers, kitchen, and dining room personnel.
  • Able to reach, bend, stoop, and frequently lift up to 40 pounds.
  • Able to work in a standing position for long periods (up to 9 hours).
