Job Title: Chef de Partie

We are seeking a skilled and experienced Chef de Partie to join our culinary team at Pomeroy Kananaskis Mountain Lodge. As a key member of our kitchen team, you will be responsible for preparing and cooking high-quality meals, leading a team of cooks, and maintaining a safe and organized work environment.

Key Responsibilities:
  • Lead a team of cooks in the preparation and cooking of meals, ensuring high-quality standards are met.
  • Train and supervise junior staff members, providing guidance and support to ensure they meet the required standards.
  • Prepare and cook complete meals, banquets, and specialty foods, such as pastries, sauces, soups, salads, vegetables, and meat, poultry, and fish dishes.
  • Implement new menus and standardize production processes to ensure consistency and quality.
  • Estimate food requirements and labor costs, and manage inventory to maintain profit margins.
  • Recruit and hire junior staff members and apprentices, and provide training and development opportunities.
  • Ensure strict health and hygiene standards are maintained in the kitchen, and follow all relevant health and safety procedures.
  • Monitor portion and waste control to maintain profit margins, and attend training courses and seminars as required.
Requirements:
  • Proven leadership skills with the ability to coach and motivate a team.
  • 3-5 years of cooking experience, with 1-2 years as a Chef de Partie.
  • Cook's trade certification or equivalent credentials, training, and experience.
  • Completion of secondary school required, and formal education in Food and Beverage or Hospitality Management an asset.
  • Understanding of labor and cost controls, and ability to adhere to plans.
