Job Summary

We are seeking a highly skilled and experienced Sous Chef to join our culinary team at Château de Mercuès. As a key member of our kitchen team, you will be responsible for managing production and execution of all menus, training and supervising staff, and ensuring exceptional guest satisfaction.

Key Responsibilities
  • Manage production and execution of all menus, including breakfast buffets, corporate lunch meetings, and formal dinners
  • Train and supervise a staff of prep cooks, line cooks, and dishwashers to execute production in the line, event line, and pastry line
  • Ensure excellence in guest satisfaction by maintaining a positive and committed attitude
  • Participate in staff education plans, including on-the-job training
  • Maintain acceptable attendance record and meet Health & Safety requirements
  • Be a personal representation of the service and overall hospitality of the staff of the property
  • Inspect food preparation and serving areas to ensure observance of safe, sanitary food handling practices
  • Supervise, instruct, and assist with cleaning duties as required, and maintain a clean and safe work station
  • Supervise and assist when needed with receiving and storing food orders
  • Oversee the work of all kitchen staff and receive direction from the executive chef
  • Help maintain a safe and sanitary kitchen, cleaning up spills and other potential hazards immediately
  • Train newly hired kitchen staff and develop the skills of all kitchen staff
  • Makes sure adequate numbers of kitchen staff are scheduled to properly handle each day's business needs
  • Participate in employee evaluations and necessary disciplinary actions
  • Meet with guests in the dining room when required
  • Place orders for recipe ingredients and other supplies
  • Ensure that all standards of safety are strictly observed
  • Look for ways to save the facility money while still providing top quality products and services for clients
  • Possess the ability to handle any menu ranging from breakfast buffets to corporate lunch meetings with sandwiches to formal dinners with multi-course meals that are individually plated, including extensive tasting menus
  • Travel to offsite areas when an event is held at another location
  • Assist with the development of dishes and menus
Requirements
  • Minimum 6 years in a similar role
  • Ability to multi-task while remaining focused on the goal
  • Excellent verbal communication and leadership skills
  • Ability to express creativity through food selections, preparation, and presentation
  • Detail-oriented and able to remain calm in high-stress situations
  • Ability to solve problems quickly under pressure
  • Able to lift 50+ lbs and stand for extended periods
  • Excellent communication skills and a positive attitude
  • Well-groomed, polite, and strong organizational skills
  • Able to absorb and embody Relais & Chateaux's 5C philosophy
