Job Summary
Great Canadian Entertainment is seeking a highly skilled and experienced Sous Chef to join our team. As a key member of our culinary team, you will be responsible for leading the preparation and presentation of our gourmet burgers, scratch-made sauces, and indulgent sides.
Key Responsibilities
- Provide leadership and direction to the culinary team, ensuring the highest standards of quality and service.
- Schedule and supervise culinary team members, assigning tasks and responsibilities to ensure efficient operations.
- Direct the preparation and presentation of menu items, adhering to standardized recipes and procedures.
- Assist with inventory management, ordering food and non-food products, and maintaining budgeted labor and food costs.
- Develop and implement new menu items, standardized procedures, and par inventory levels.
- Train and mentor team members in new culinary techniques and procedures.
- Review and analyze inventory reports, identifying discrepancies and taking corrective action.
- Liaise with operational departments to ensure seamless communication and collaboration.
- Develop and maintain strong relationships with stakeholders, including guests, management, team members, and vendors.
- Ensure compliance with licensing laws, health and safety regulations, and other statutory requirements.
Requirements
- High School Diploma; Post-Secondary education in culinary management or suitable combination of education and experience an asset.
- Minimum 2 years of culinary management experience.
- Red Seal certification through ITA or current enrollment in the program an asset.
- Food Safety Certification Level 2.
- Computer literacy in MS Office.
- Experience managing in a unionized environment an asset.
- Ability to successfully obtain a Criminal Record Check.
Work Environment Considerations
- Regular kitchen environment, standing and walking for long periods of time, and non-traditional work hours.
