Executive Chef Assistant

The Après Second Cook is a pivotal role in our kitchen team, responsible for producing a significant portion of the food necessary for our day-to-day operations. This position is ideal for an individual who is passionate about cooking and working as part of a team.
Key Responsibilities:- Work closely with the sous chef and 1st Cook to ensure seamless kitchen operations.
- Prioritize and manage prep lists and ordering lists to maintain efficient kitchen workflow.
- Process incoming bills, prioritize tasks, and coordinate timing for pick-up.
- Maintain optimal prep levels, adapting to busy and slow days.
- Ensure the restaurant line is properly stocked with adequate backups for service.
- Utilize raw by-products, leftovers, and extras to create specials, soups, and other cost-saving initiatives.
- Have in-depth knowledge of the menu and follow recipes accurately.
- Assist the dishwasher as needed to maintain a clean and efficient kitchen environment.
- Ensure the cleanliness and safety of the kitchen, adhering to high standards.
- Accurately put away food deliveries, checking for quality and proper rotation.
- Monitor food storage conditions to prevent spoilage and contamination.
- Estimate food quantities to prepare and cook, adhering to specified guidelines.
- Select and apply spices, herbs, and condiments to enhance dishes.
- Prepare basic stocks and sauces to support menu offerings.
- Produce food with correct taste, temperature, and visual appeal, guided by supervisors.
- Identify, clean, and use kitchen equipment correctly, reporting malfunctions to the sous chef.
- Provide clear instructions to 3rd cooks and dishwashers as needed.
- Demonstrate a thorough understanding of all menus, recipes, and standards for the area.
- Anticipate potential kitchen needs, such as defrosting and ordering, to prevent shortages.
- Understand the concept of food costing and contribution.
- Process various types of food quickly and efficiently, combined with good basic cooking skills.
- Minimum three years of cooking experience required.
- Ability to cook steaks to desired doneness.
- Understanding of various cooking methods.
- Good knowledge of soups and sauces.
