Position Overview
Assistant Culinary Director
In the role of Assistant Culinary Director, you will guide a talented team of culinary experts, providing innovative culinary direction to craft unforgettable dining experiences. Your leadership will reflect in guest satisfaction and team engagement, as we strive for continuous improvement in our culinary offerings. Our culinary ethos emphasizes respect for each other, our ingredients, and our guests' experiences, encapsulated in our belief that "EVERYTHING MATTERS."
Key Responsibilities
- Oversee daily kitchen operations, ensuring exceptional service through active leadership.
- Collaborate with culinary leaders to manage all aspects of the culinary and stewarding departments.
- Supervise the Stewarding Department, including scheduling and performance management.
- Manage departmental budgets through effective purchasing and inventory control.
- Enhance revenue through strategic menu design and promotional initiatives.
- Ensure compliance with food safety and sanitation standards.
- Build strong relationships with local suppliers for sourcing quality ingredients.
- Represent our culinary program at industry events.
- Work with other departments to ensure seamless hotel operations and guest satisfaction.
- Mentor and train the culinary team to deliver exceptional culinary experiences.
- Engage with guests to ensure their culinary experiences exceed expectations.
- Address guest feedback proactively to enhance satisfaction metrics.
- Participate in recruiting and onboarding new team members.
- Foster the development of internal talent.
- Engage in social media and public relations efforts to promote our culinary offerings.
- Assume leadership in the absence of the Executive Chef.
- Adhere to all company policies and values.
- Perform additional duties as assigned.
Qualifications
- Minimum of 5 years' experience in a senior culinary role, preferably in both standalone restaurants and luxury hotels.
- A genuine passion for culinary arts and guest engagement.
- Strong knowledge of local food trends and products.
- Food Safe certification or equivalent.
- Interprovincial Red Seal certification is an asset.
- Proven organizational skills in a fast-paced environment.
- Excellent communication skills, both verbal and written.
- Proficient in Microsoft Office applications.
- Ability to thrive in a customer-focused, high-pressure environment.
- Team-oriented with strong leadership capabilities.
- Understanding of productivity and labor cost management.
- Knowledge of food cost calculations.
- Commitment to safe work practices.
- Ability to taste and evaluate food products.
- Physical capability to perform the duties of the role.
