Role Overview

Key Responsibilities

  1. Oversee the Receiving Clerk, manage Food and Beverage requisitions, conduct Sales Analysis and Standard Recipe Costing, prepare Cost Reports, and monitor non-food purchases against budgetary constraints. Ensure pre-costing of all restaurant and banquet menus, maintain inventory of Food and Beverage and general items, and manage minimum and maximum par levels for all stock items.
  2. Guarantee the efficient operation of Cost Control, Store rooms, and Receiving, assisting Management in minimizing costs associated with food, beverage, and other supplies.
  3. Report any issues that may impact the hotel's interests to Management promptly.

Financial Planning

  1. Conduct various activities such as menu costing, pricing, and modifications based on the requirements of the Food and Beverage Department.
  2. Compile a monthly list of slow-moving and obsolete items, providing recommendations for further action.

Team Management

  1. Foster seamless coordination and collaboration with all hotel departments to enhance cooperation, productivity, and guest satisfaction.
  2. Address inquiries and resolve issues efficiently to ensure customer contentment.
  3. Keep all personnel informed about departmental objectives and policies.

Financial Oversight

  1. Identify and promote optimal, cost-effective resource utilization, educating the team on best practices.

Operational Oversight

  1. Conduct comprehensive inventories of Food and Beverage.
  2. Supervise all operational aspects of Cost Control, including:
    1. Verification of KOTs/BOTs.
    2. Conducting Spot Checks.
  3. Finalize all cost-related accounts for Food and Beverages.
  4. Compare monthly food and beverage purchases with Accounts Payables.
  5. Submit all Food and Beverage cost-related information to the Accounts Department.
  6. Perform monthly inventory checks of food, beverage, and other storeroom items.

Qualifications

  1. Diploma in Accounting or Finance, or equivalent qualification.

Additional Information

  1. A minimum of 4-5 years of experience in a similar role.
  2. Strong proficiency in reading, writing, and speaking English.
  3. Proficient in MS Excel, Word, PowerPoint, and relevant accounting software.
