Job Title: Yakitori Sous Chef

Job Summary: We are seeking a skilled Yakitori Sous Chef to join our team at Yakitori Marketing Corp. in Toronto, Ontario. As a key member of our kitchen team, you will assist the Head Chef in preparing and cooking various grilled dishes with Japanese charcoal (Binchotan) and Japanese Izakaya-style dishes.

Responsibilities:

  • Assist the Head Chef in preparing and cooking grilled dishes with Japanese charcoal (Binchotan)
  • Assist the Head Chef in preparing and cooking Japanese Izakaya-style dishes such as cold and hot appetizers, salads, grilled seafood, and deep-fried fish vegetables & meats
  • Assist the Head Chef in menu creation
  • Work with the Head Chef to maintain kitchen organization, staff ability, and training opportunities
  • Check proper portion sizes and consistently maintain a high quality of freshness for sushi, sashimi, salads, and cold and hot tapas dishes
  • Assist the Head Chef with instruction and supervision of kitchen helpers in their relevant duties of preparation and handling of food
  • Assist in managing kitchen helpers by orienting, training, assigning, and evaluating their work
  • Check food preparation, food storage, use of kitchen equipment and utensils to ensure observance of safe, sanitary food-handling practices in accordance with restaurant health and safety guidelines
  • Estimate expected food consumption, maintain an inventory record, and discuss with the Head Chef when re-stocking supplies is required
  • Create seasonal appetizers, hot and cold tapas menus, when required
  • Manage duties of the Head Chef in the absence of the Head Chef if needed

Requirements:

  • Two years of experience or more in preparing and cooking Yakitori dishes (grilling with Japanese Binchotan charcoal)
  • Two years of experience or more in preparing and cooking Japanese Izakaya-style dishes such as cold and hot appetizers, salads, grilled seafood, and deep-fried fish vegetables & meats
  • Experience with Japanese charcoal (Binchotan) grilling is an asset but not mandatory
  • Ability to work evenings, weekends, and overtime as assigned
  • Ability to work well in a fast-paced environment
  • Completion of secondary (high) school is required
  • Basic oral English is required
