Position Overview:

Arterra Wines Canada stands as a premier producer and marketer of renowned Canadian and imported wines. We are currently seeking skilled individuals for the role of Line Cook to enhance our culinary operations. The Line Cook will collaborate with a seasoned team to prepare and deliver exceptional food service and cater to private events.

Key Responsibilities:

  • Prepare a diverse range of meats, seafood, poultry, vegetables, and other food items utilizing various cooking equipment including broilers, ovens, grills, and fryers.
  • Execute daily opening, closing, and sanitation tasks as directed by the winery chef; maintaining a well-prepared and clean kitchen is vital for ensuring positive guest experiences.
  • Consistently adhere to standard portion sizes, cooking techniques, quality benchmarks, and kitchen policies.
  • Ensure adequate stock levels of food products at line stations to facilitate smooth service operations.
  • Portion food items prior to cooking in accordance with established portion sizes and recipe guidelines.
  • Maintain a clean and sanitary workstation, including tables, shelves, grills, fryers, and refrigeration units.
  • Follow proper presentation and garnish protocols for all dishes served.
  • Handle, store, and rotate all products appropriately.
  • Assist with food preparation tasks during slower periods as required.
  • Properly close the kitchen and adhere to the closing checklist for kitchen stations, assisting colleagues as needed.
  • Participate in all scheduled staff meetings and contribute suggestions for operational improvements.
  • Perform additional related duties as assigned by the Estate Chef or manager on duty.

Qualifications:

  • A minimum of 2 years of experience in kitchen preparation and cooking.
  • At least 6 months of experience in a similar role.
  • Ability to communicate effectively with management and kitchen staff.
  • Capable of reaching, bending, stooping, and frequently lifting up to 40 pounds.
  • Able to stand for extended periods, up to 9 hours.
