Job Overview

The Assistant Culinary Director plays a vital role in supporting the Culinary Director in managing the kitchen operations at Château de Mercuès, ensuring outstanding quality, innovation, and operational efficiency.

Key Responsibilities:

Collaborate with the Culinary Director to design and develop unique menu selections. Supervise and coordinate daily kitchen functions to ensure seamless operations. Train, guide, and inspire kitchen personnel, upholding high performance standards. Oversee inventory management, procurement, and stock rotation to fulfill kitchen needs. Ensure compliance with food safety, sanitation, and hygiene regulations. Engage in menu planning, tastings, and special culinary events. Assist in formulating and enforcing kitchen policies and procedures. Monitor kitchen equipment and coordinate necessary repairs and maintenance. Partner with suppliers to procure premium quality ingredients. Contribute to cost management strategies and budget oversight. Foster a positive and collaborative work atmosphere. Assume the responsibilities of the Culinary Director in their absence, managing all kitchen operations.

Qualifications:

Culinary degree or equivalent credentials. Demonstrated experience as a Sous Chef or Assistant Culinary Director in a fine dining establishment. Strong leadership and management capabilities. Exceptional culinary skills and creativity. Familiarity with kitchen best practices, including health and safety protocols. Ability to thrive in high-pressure environments while maintaining composure. Proficient communication and organizational skills. Capability to stand for long periods, lift heavy kitchen equipment, and work in a demanding kitchen setting.
