Vintage Hotels is seeking a skilled Chef de Partie to join our Pastry team at Inn on the Twenty.

Key Responsibilities:

  • Ensure that Team Members have all the necessary food items to serve the menu and/or fill up the buffet for breakfast, lunch, or dinner on a daily basis.
  • Supervise and direct kitchen Team Members by scheduling workload, assisting Team Members when required to meet the cooking requirements.
  • Act as a team leader with Kitchen Team Members, cooking and setting up the buffet for breakfast/lunch/brunch and for a la carte menu items.
  • Ensure the rotation of food stocks and perform inventory control functions.
  • Check the kitchen function sheets daily to ensure that the food items are available and that special item menu and/or buffet requirements are attainable.
  • Ensure that Team Members' lunch is made and delivered to the Team Member restaurant daily.
  • Ensure that the kitchen standards are upheld at all times both personally and by team members.
  • Have a thorough knowledge of Lais Hotel Properties' products and services.
  • Suggest additional products and services meeting our Guests' specific preferences.

Requirements:

  • Certificate in Cooking through a recognized Culinary Institute with an apprenticeship program completed.
  • Five plus (5+) years of progressive experience in a fine dining establishment.
  • Good decision-making ability and above-average oral communication skills.
  • Good safety training and/or knowledge required.
  • Current Safe Food Handler's Certificate.
  • Previous up-selling and/or sales experience is considered an asset.
