Position: Lead Culinary Specialist

Unit: Mr. Milligan

Point of Hire Location: Remote

Rotation: 28 days on / 14 days off (10 hour shifts)

Wage: $24.64 per hour

Role Overview: As a key member of our culinary team, you will ensure exceptional service quality while preparing and serving meals to our clientele. Your responsibilities will encompass the following:

Core Responsibilities:

  • Prepare and serve meals at various stations, including a la carte and buffet.
  • Utilize diverse kitchen equipment to prepare ingredients, including washing, peeling, cutting, and shredding produce, as well as trimming meats and seafood.
  • Collect and manage all necessary production and HACCP data within your designated areas.
  • Analyze HACCP reports and implement corrective measures for any discrepancies.
  • Ensure accurate labeling of food items, including ingredient lists and allergen information.
  • Evaluate food requirements, monitor production levels, and maintain accurate records for effective planning and supply requisition.
  • Maintain cleanliness and sanitation of workstations and equipment, adhering to all company and regulatory guidelines.
  • Produce a variety of dishes using both classical and modern cooking techniques.
  • Follow detailed recipes for the preparation, seasoning, and presentation of various food items.
  • Assist in supervising kitchen staff and training less experienced cooks.
  • Prepare meals accommodating special dietary needs.
  • Oversee production staff and delegate tasks as necessary.
  • Utilize production software for data entry related to inventory and production.
  • Participate in training sessions, both in-person and online, as required.
  • Attend all relevant food safety and allergy training sessions.
  • Adhere to all safety and risk management policies and procedures.
  • Participate in regular safety meetings and training sessions.
  • Report any incidents or injuries promptly.
  • Perform additional duties as assigned.

Qualifications:

  • Must possess an Interprovincial 'Red Seal' or equivalent certification from recognized programs.
  • A minimum of 10 years of experience in a high-volume culinary environment.
  • Proven ability to train, supervise, and schedule kitchen staff.
  • Experience with Microsoft Office applications.
  • Basic baking knowledge to oversee bakery operations.
  • Strong understanding of advanced kitchen management practices.
  • 3-5 years of food preparation experience in a fast-paced setting.
  • 3 years of experience with HACCP food safety protocols.
  • Willingness to work flexible shifts as needed.
  • Must pass a Pre-Access Drug and Alcohol Test.
  • Demonstrate personal and professional integrity.
