Role Overview: As a vital member of our culinary team, you will ensure the delivery of exceptional customer service while preparing and serving high-quality meals. Your responsibilities will encompass a range of tasks as outlined below, with the possibility of additional duties as assigned by Sodexo.
Key Responsibilities:
- Prepare and serve meals at various stations, including a la carte and buffet.
- Utilize diverse kitchen equipment to prepare ingredients, including washing, peeling, cutting, and shredding fruits and vegetables, as well as trimming meats and seafood.
- Ensure compliance with all mandated production and HACCP data collection in your designated areas.
- Analyze HACCP reports and implement corrective actions for any discrepancies.
- Submit accurate ingredient lists and allergen information for menu items.
- Evaluate food requirements, monitor production, and maintain records to effectively plan and requisition supplies.
- Maintain cleanliness and sanitation of workstations and equipment, adhering to all relevant safety and regulatory guidelines.
- Prepare a variety of dishes using advanced cooking techniques, including plating and garnishing.
- Follow detailed recipes for preparing, seasoning, and serving a range of culinary items.
- Assist in supervising kitchen staff and training less experienced cooks.
- Independently execute advanced cooking tasks with minimal supervision.
- Oversee production staff and delegate tasks effectively.
- Utilize production software for inventory management and data entry.
- Participate in training programs and safety meetings as required.
- Report all incidents and injuries promptly.
- Perform additional duties as necessary.
Qualifications:
- Certification: Must possess an Interprovincial 'Red Seal' or equivalent international certification.
- Experience: Minimum of 10 years in a high-volume culinary environment.
- Leadership: Proven ability to train, supervise, and schedule kitchen staff.
- Technical Skills: Proficient in Microsoft Office and advanced kitchen management techniques.
- Food Safety: Experience with HACCP processes and food safety protocols.
- Flexibility: Willingness to work varying shifts as needed.
- Integrity: Demonstrate personal and professional integrity in all interactions.
