First Cook - Kitchen Lead

The Peppered Elk is a new brand for the Central Alberta region. We are located at our partnered Ponoka Community Golf Club where our full-service, seasonal restaurant, provides locally sourced & inspired menus with an inviting atmosphere for any occasion. We are looking for someone who is excited to be an integral team member and help grow the brand.

Your main responsibilities will be the preparation and production of high quality food, and your other duties will include continuous hands-on training of all kitchen team members, menu planning, recipe costing, as well as efficiently following purchasing, receiving, food storage and inventory control procedures. This is a hands on working position.

JOB RESPONSIBILITIES:

- This position will take the leadership role in preparation and production of all food requirements for our varied daily functions
- Predominantly responsible for the leadership and guidance of a 4 person team, responsible for preparing all food requirements throughout the property.
- Responsible for organizing and providing all food items for the halfway house, beverage cart, on-site mass quantity
- Assist with the continuous hands-on training of all kitchen team members, focused on providing consistently high quality food and value
- Assist with menu planning and recipe costing, as required
- Assist with the maintenance of efficient purchasing, receiving, food storage and inventory control procedures
- Ensure all kitchen team members are correctly trained according to AHS approved food handling procedures
- Achieve and maintain full compliance with all regulatory health and safety codes in food preparation areas
- Complete all standard requirements of The Peppered Elk’s health & safety training and maintain a strong workplace health and safety environment
- Actively participate in health and safety committee meetings
- Complete certification on WHMIS policies and procedures

Job Duties:

- Prepare, season and cook food as directed, meeting dietary requirements where required
- Follow recipes and presentation specifications
- Operate standard kitchen equipment safely and efficiently
- Clean and maintain station in practicing good safety and sanitation
- Oversee kitchen operations
- Maintain inventory and record of food, supplies and equipment
- Adhere to all sanitation and food production codes
