Production Kitchen Lead

A Production Lead is responsible for maintaining and exceeding guest satisfaction in the production and/or logistics of all products served in the restaurants and delivered by catering. They communicate and set the expectation for the commissary team, through the production of their own lists. Duties and responsibilities are to be carried out while adhering to all company policies and procedures. They will establish and maintain systems and procedures for the ordering, receiving, storing, and preparing. They will also supervise, train, and lead a food preparation operation, maintain customer service, and ensure appropriate quantities of food are prepared and served. Meets all time constraints set by the customer menu requirements.
**Responsibilities**:
- Ensure that all products have been prepped, prepared and portioned in 100% accordance to Stella’s recipes
- Achieves the objective established by the Executive Chef and PKM by implementing decisions on every shift
- Maintain up-to-date working knowledge of recipe and equipment
- Assist in leading the prep team while completing all production lists that meet Stella’s standards
- Create and maintain daily prep lists for each station
- Conducting cooler checks for flavour, texture and consistency
- Assisting in the training of all staff
- Overseeing that all cleaning checklists are being completed, ensuring safe and sanitary workstations
- Ensuring that production expediency and productivity is maintained; delegating, and assigning tasks to all employees throughout every shift
- Ensure that all products are stored properly
- Ensure proper cleanliness and organization of walk-in fridges, freezers, and all other storage areas
- Ensuring that all equipment and tools are in good working condition
- Opening or closing the facility at the beginning or end of the day
- Adhering to Manitoba Food Safe requirements
- Providing feedback to the PKM on the performance of all employees, kitchen, equipment, and opportunities for improvement
- Ensuring that the measuring and preparing of all ingredients is in accordance to Stella’s recipes
- Ensuring that maintenance of the production kitchen by sanitizing all areas before and after use
- Ensure all knives and equipment are clean and in good working condition
- Ensure that employees are clocking in and out for shifts and for breaks
- Producing, working with and communicating information via reports as required
- Always ensuring confidentiality and protection of all employee information
- Ensuring that all employees are provided a work environment that is safe and free of any harassment
- Ensure employees are trained in and adhere to all food handling and health and safety procedures
- Exhibit personal uniform and personal hygiene per company standards
- Other duties as assigned
**Requirements**:
- Maintain Manitoba Food Handlers certification
- Excellent coaching and team-building skills
- Experience in a kitchen/food production facility
- Excellent communication skills, verbal and written
- Outstanding organization, coordination, multi-tasking, and leadership abilities
- Ability to be proactive in challenging situations
- Experience in previous kitchen production levels
- Computer skills in Microsoft Office programs
- Great customer service and interpersonal skills
- Strong Leadership and supervisory skills
- Ability to work in a team environment
- Ability to follow detailed written and verbal instruction
- Food Service Experience preferred
- Requires frequent lifting/transporting hot food items
- Ability to work inside kitchen area, interact with heated equipment, steam, loud noise, chemicals and other at risk conditions
- This role may have physical demands including, but not limited to, lifting, bending, pushing, pulling and/or extended walking and standing. This role may also require uniforms and/or usage of Personal Protective Equipment (PPE).
