Executive Chef

We are seeking an Executive Chef for Elm Hurst Inn.
Must have strong experience in the Hotels industry, strong in Banquets and Restaurants plus the hotel F&B other departments.
The Executive Chef is responsible for the successful daily operations of the culinary department, including staff development, culinary standards, sanitation procedures, menu development, food and ingredient specifications, financial performance, and culinary training programs.
- Supervise and instructs culinary employees in daily duties and provide regular coaching and training.
- Follow the Hilton DoubleTree brand standards at ALL times.
- Work closely with the Sous Chef on scheduling matters; payroll and other administrative tasks.
- With respect to hotel operations, oversee the food production and kitchen operation for catered events and banquet facilities. Be responsible for the creation of all menus, including banquet menus, considering marketing conditions, and the popularity of various products. Rooms Service, Market place.
- Regularly monitor and inspect kitchen equipment, report any problems or inconsistencies to the General Manager and make recommendations for repair or procurement. Work hand in hand with the different contractors.
- Play an active role with the Sous Chefs preparing schedules for all food services, tracking and managing kitchen labor on a daily basis for comparison to budget.
- Weddings / social events/conferences - Planning, going over contracts, special dietary requests, and special instructions.
- Restaurant
- build menus, breakfast buffet operation plus a la cart, lunch menu, dinner menu.
- Participate in weekly, monthly, and quarterly operations meetings.
- Determine all food specifications and coordinate all ordering of food and kitchen supplies. Ensure ordering & inventory are on time and within budget.
- In Charge of recruiting new hires for all the kitchen departments.
- Consult with the HR department on employment and other employee relations matters.
- Take all necessary actions to produce food cost and labor cost results that meet or exceed budgeted expectations.
- Provide a safe environment for the team members and treat all respectfully.
- Work closely with the sales & events function to ensure successful catered events are held at the hotel.
**REQUIREMENTS**
- Strong communication skills, and a demonstrated ability to coach, develop and mentor team members
- Strong financial, scheduling and proven culinary skills are required
- Previous high-volume experience required, as well as previous proven experience leading a larger kitchen team
- Hotel culinary experience an asset, previous Hilton brand experience an asset.

**Salary**: $65,000.00-$75,000.00 per year
