**Job Summary**:
As the Fermentation and Production Manager, you will oversee the production of all beverages manufactured at Heeman’s, including hard cider, mead, and non-alcoholic beverages.

Heeman’s Cellar is under the umbrella of Heeman’s Strawberries and has been making award-winning cider and meads since 2019.

**Responsibilities**:

- Contribute to the overall success of Heeman’s Cellar by overseeing/supporting other relevant projects and exhibiting a positive attitude and positive work habits.
- Inoculation and fermentation management, including additions, racking, filtering, blending and carbonation of any raw liquid coming into the cellar.
- Follow aging and quality control on tanks and barrels.
- Creating and following through blending plans for all SKUs, including concept development for our small batch Cellar Club releases.
- Keep up-to-date and accurate notes and alterations to fermentation and blending plans.
- Manage logistics and planning for carbonating, bottling, canning and kegging.
- Support production associates when needed.
- Plan and order all supplies needed, including fermentation management ingredients, packaging materials and blending.
- Overview and update for all Standard Operating Procedures in Heeman’s Cellar.
- Maintain current and precise documentation of fermentation and blending plans, including any updates or revisions
- Coordinate with the marketing and front-of-house teams to coordinate cider and mead releases.
- Liaise with the marketing team.
- Inventory management for sales and reporting purposes.
- Work in compliance with all human resources, operational (SOP) and Food, Health & Safety policies and procedures.

- Open communication style
- Excellent time management skills and ability to manage frequent interruptions
- Advanced Microsoft Excel (experience with pivot tables)
- Ability to work independently
- Detail oriented
- Adaptability to a continuously changing work environment

**Education, Experience & Language**
- 5+ years of Fermentation Experience
- Language: advanced English (written and oral)
- Advanced-level math (titrations and advanced blending ratios)
- Lab microbiology is preferred but not required
- Forklift Experience is an asset
- Experience working at heights is an asset

- No two days are the same at Heeman’s Cellar, keeping things interesting and exciting. As a busy cidery, we have seasonal peaks (Fall) with high production turnover rates, and we are open year-round with many projects on the go. The environment in the cidery can be cold and wet and you’ll need to be comfortable going up and down ladders, standing for long periods of time and being capable of lifting up to 50lbs. You’ll need to be self-motivated and enjoy working with your hands in a fast-paced environment that could include working on your own.
