About Us: At To Live For, we pride ourselves on creating exceptional plant-based pastries and desserts. We are seeking a passionate and experienced Pastry Chef to raise the bar and lead our back-of-house operations, drive our recipe development, and inspire our team to achieve new heights in culinary excellence that will help prove to the world that the future of baking is plant-based.

Key Responsibilities:

- Back-of-House Leadership: Lead our 20-person back of house team to facilitate a welcoming work environment while ensuring the highest standards of quality, flavour and efficiency.
- Professional Pastry Training: Utilize your professional pastry training to elevate our offerings and continuously offer a wide variety of mouthwatering options.
- Extensive Bakery Experience: Bring 7+ years of bakery experience to our team, showcasing your expertise in croissants, bread, and a wide variety of pastries and desserts.
- Staff Scheduling: Create the weekly staff schedule, reorganize the schedule when necessary, and fill gaps in the schedule as needed.
- Talent Identification and Development: Identify, hire, and train new team members, fostering a culture of growth, excellence, hard-work and fun.
- Recipe Development: Lead the creation and refinement of recipes while working closely with the leadership team - must be open to teamwork and collaboration.
- Menu Innovation: Passionately brainstorm and develop new menu items and flavors, keeping our offerings fresh and exciting.
- Cleanliness: Maintain an obsession with cleanliness, ensuring our kitchen and workspaces are always pristine by leading by example, delegating to staff and checking side duties.
- Team Feedback and Direction: Provide constructive feedback and clear direction to teammates, helping them improve, excel and deliver a consistent product.
- Production Forecasting: Accurately forecast daily production needs based on sales reports, weather and holidays.
- Communication Skills: Demonstrate strong oral and written communication skills, effectively conveying information to team members through recipes and written visuals throughout the kitchen.
- Cost Management: Comfortably cost out recipes and work with spreadsheets to manage our recipe budgets and resources effectively.

Qualifications:

- Professional pastry training from a recognized institution.
- 7-10 years of experience in a bakery setting, with a focus on croissants, bread, and a variety of pastries and desserts.
- Very comfortable working with plant-based ingredients.
- Flexible schedule and comfortable working early mornings and weekends (our busiest days).
- Proven ability to identify and nurture talent, as well as train new team members.
- Strong leadership skills with experience in recipe development and menu innovation.
- Exceptional organizational skills and a keen eye for detail.
- Strong oral and written communication skills.
- Proficiency in costing out recipes and using spreadsheets for budget management.
- A collaborative mindset with a passion for creating delicious and innovative baked goods.
- An unwavering commitment to cleanliness and maintaining a high standard of hygiene.
