Shoushin is a Michelin starred restaurant seeking a skilled and experienced Sushi Chef to join the team. The right candidate will be passionate, and a true student of making nigiri. As a sushi chef, you will be responsible for preparation of various wild caught Japanese fish, working alongside our established team to deliver an unforgettable culinary experience for our guests.

Qualifications:

- 5+ years of experience as a Sushi Chef; Sous or Head chef position an asset.

-Passion and Knowledge of Japanese Cuisine; Willingness to learn

-Proficiency in filleting fish and various seafood preparations

-Proper knife sharpening skills an asset.

- Customer service skills

- Flexibility to work evenings, weekends, and holidays as required

-Knowledge of the english language; Use of Japanese Language also an asset.

- Food handlers license or equivalent

Duties:

-Display awareness, and sense of urgency in work

- Prepare a variety of Japanese dishes in accordance with instructions from Head chef.

-Proper sterilization and organization of equipment, utensils, and work space.

-Cutting and filleting with speed and precision in preparation of service.

-Unloading deliveries, with proper storage of Japanese ingredients and fish.

-Inspect quality and freshness of stock, informing chef of any quality concerns.

- Monitor inventory levels and inform chef for ingredients needed.

-Exhibit professionalism in attendance, hygiene, and personal care.

- Collaborate with kitchen and wait staff to coordinate the timing of sushi orders with other menu items

- Adhere to food safety and sanitation standards at all times

-Constantly seek growth in skill and knowledge

Job Type: Full-time

Pay: From $50,000.00 per year
