BEGINNING OF SHIFT (Start-of-Shift Walk-Through)

Validation of sales and labor cost objectives

  • Review previous day's sales and comparisons (same day last week, same day last year)
  • Validate sales objectives for the shift
  • Validate labor cost objectives
  • Consult activity report

Validation of "staff management"

  • Check outdoor temperature
  • Review schedules and on-call staff
  • Employee positioning and zoning for the shift
  • Assign individual tasks (following the opening walk-through)
  • Cash registers

➔ Employee deposits

➔ Change in cash drawers

➔ Safe balancing

DURING THE SHIFT

  • Ensure that all employees are in uniform and compliant with the employee handbook (dress code, no perfume, earrings).
  • Make sure all spontaneous tasks are properly executed.
  • Ensure that all employees under supervision are in control and refer to the supervisor (mainly the team leader—who manages the runners—, cashiers, recipe staff, customer experience, and restocking).
  • Check the activity report in Maître'D every hour to ensure that labor costs align with the daily target and current sales.

CLOSING – END OF SHIFT

  • Assign closing tasks in collaboration with the team leader on duty.
  • Communicate with the management team regarding the next shift.
  • Check if there are any transactions to be voided.
  • Balance the cash registers.
  • Balance the safes.
  • Review the next day's schedule and adjust if necessary.
  • Validate the completion of each employee's closing tasks.
  • Conduct a final walk-through of the store to check cleaning and setup.
  • Ensure that no open invoices remain on the screens.
  • Adjust employee punch records for the shift (ensure to clock out personally).
