Job Title: Chef de Cuisine (CDC) – Mediterranean & Asian Fusion
Location: Toronto, ON (The Well)
Reports to: Executive Chef
The Vision
We are launching a boundary-pushing concept that bridges the Silk Road—blending the bright, coastal flavors of the Mediterranean with the intricate techniques and bold umami of East and Southeast Asia. We are looking for a highly experienced, systems-oriented Chef de Cuisine to serve as the operational backbone of our kitchen, translating the Executive Chef's vision into consistent, world-class execution.
Key Responsibilities
- Operational Excellence: Oversee all day-to-day BOH operations, ensuring the kitchen runs with surgical precision during high-volume Toronto service hours.
- Culinary R&D: Collaborate with the Executive Chef on seasonal menu development, specifically focusing on the intersection of Mediterranean ingredients (botanicals, citrus, seafood) and Asian techniques (koji-aging, charcoal grilling, fermentation).
- Team Leadership: Mentor and manage a team of 10+ kitchen staff, including the Sous Chef and Line Cooks, fostering a culture of "high standards, low ego."
- Financial Stewardship: Take full ownership of food costs, labor percentages, and inventory management without compromising on the quality of premium local and imported ingredients.
- Systems Management: Implement and maintain rigorous SOPs for food safety, prep schedules, and station organization.
The Ideal Candidate Profile
Experience:
5+ years in high-volume, upscale dining; at least 2 years as a CDC, Senior Sous, or Sous role.
Technical Skill:
Mastery of both Mediterranean (e.g., whole fish butchery, pasta/dough) and Asian (e.g., wok-hei, sashim-grade prep, preservation) techniques.
Leadership:
Proven ability to lead a diverse team in a fast-paced, high-pressure environment.
Language:
Excellent English communication; additional languages (Spanish, Cantonese, Mandarin, etc.) are a significant asset in a Toronto
