Chef de Partie

Chefs de Partie oversee specific kitchen stations and ensure the consistent production of high-quality food items across all Legends Culinary operations, including concessions, suites, catering, and premium dining. They supervise First and Second Cooks and provide hands-on leadership in preparation, presentation, and service execution. The CDP upholds Legends' culinary standards through organization, technical skill, and mentorship, maintaining efficiency, safety, and quality in all assigned areas.

The RoleDuties & Responsibilities
  • Supervise assigned kitchen stations and oversee daily food preparation and service.
  • Direct and support First and Second Cooks in production, plating, and service flow.
  • Ensure food quality, portioning, and presentation align with Legends' standards.
  • Coordinate with Sous Chefs on production schedules, event menus, and special functions.
  • Train, coach, and develop cooks to enhance consistency and technical skills.
  • Maintain inventory accuracy, control waste, and manage station ordering.
  • Ensure all kitchen areas, tools, and equipment remain clean, organized, and operational.
  • Enforce HACCP, sanitation, and food safety regulations at all times.
  • Collaborate with culinary leadership on menu innovation, presentation techniques, and efficiency improvements.
  • Perform event and post-shift reports, ensuring all assigned sections are reset and ready for the next service.
Skills & Abilities
  • Advanced culinary techniques across multiple stations.
  • Strong leadership, training, and communication skills.
  • Excellent organization and multitasking abilities.
  • Ability to manage performance and maintain composure in high-pressure environments.
  • Deep understanding of HACCP and food safety practices.
Knowledge, Education, & Experience
  • Red Seal or equivalent culinary certification required.
  • Minimum 6 years of professional cooking experience, including 1–2 years in a lead or CDP role.
  • Proven experience in fine dining, banquets, and large-scale production.
  • Familiarity with inventory control and menu costing.
  • Ability to work flexible hours, including evenings, weekends, and holidays.
Physical Demands
  • Prolonged standing and walking in a fast-paced kitchen environment.
  • Frequent lifting, reaching, and carrying up to 50 pounds.
  • Exposure to heat, steam, and varying kitchen conditions.
  • Requires clear vision and communication for safety and coordination.
