Toptable Group is seeking a new Executive Chef for our restaurant, CinCin, in downtown Vancouver. The menu at CinCin represents the clean and plentiful flavours of Italian gastronomy. Each dish is prepared with the freshest, thoughtfully selected ingredients sourced from the regions best suppliers and transformed into a parade of captivating aromas, tastes and textures. This hands-on role is responsible for leading kitchen operations and will show a commitment to excellence in all that they do, and the incumbent will have the opportunity to part of an experienced kitchen team and work with exceptional seasonal products.
**ESSENTIAL DUTIES AND RESPONSIBILITIES**:
(Other duties may be assigned as required)
- Responsible for the overall management of culinary staff
- Participate in the kitchen as a hands-on Executive Chef, cooking along-side other culinary staff
- Oversee the hiring and training of all culinary team members; support the mentorship and development of culinary team members on a daily basis
- Create menus for specific client requests; coordinate all food requisitions for event menu requirements
- Engage with guests, as well as team members to ensure exceptional hospitality
- Work with culinary team to ensure correct billing of food, labor, taxes, and gratuities, etc.
- Maintain sanitation standards throughout the kitchens to comply with Provincial regulations
- Manage sales revenues and operating expenses effectively
- Provide input into product ordering and oversee receiving within corporate specifications
- Ensure food quality in presentation and production throughout the venue
**REQUIRED EXPERIENCE AND QUALIFICATIONS**:
- Minimum 5 years of senior-level experience within a similar fine dining, high volume establishment
- Equivalent Red Seal certification, a degree in the Culinary Arts or an equivalent combination of education and experience
- An inspiring leader who has proven skills rallying a team to achieve its highest potential
- An ongoing awareness and responsiveness to client satisfaction
- Proven knowledge of inventory/cost control with an understanding of Industry business principles
- Ability to work well under pressure in a dynamic and fast-paced environment
- Exceptional interpersonal, presentation, and communication skills
- Impeccable creative culinary abilities; skilled at developing dining experiences that drive customer satisfaction and loyalty
- Experience in food costing and menu development
- An excellent knowledge of food and wine pairings
- An energetic and motivated team player; highly committed to a premium level of quality
- Solid organizational skills with the ability to handle multiple projects at one time
- Flexibility to work evenings, weekends and holidays
