DUTIES AND RESPONSIBILITIES
- Prepares and presents a broad array of cakes, pastries, desserts, cakes, petits fours which meet customer expectations.
- Create the menu and work out the recipes
- Train the kitchen team and manage the production process
- Supervise kitchen team in the preparation of the recipes
- Monitoring consistency and quality of the product being made daily
- Check quality of each ingredient
- Taste end product to ensure that the taste, texture and quality is according to specified standards
- Manage and schedule timely delivery to each shop, monitor the par list at each shop and ensure they have sufficient products to sell
- Responsible for managing & training the team in the kitchen
- Lead the shift
- Monitor the team progress throughout the day
- Motivate the team
- Delegate whenever necessary
- In charge of the day to day operations in the kitchen
- Follow the opening and closing procedures
- Responsible of cleaning duties
- Anticipate the next few days
- Check inventory
- Maintain great level of cleanliness throughout the shift in accordance with health regulation
- Supervise the work of the kitchen team
- Train the team in health regulation procedures
- Respect cleanliness and avoid cross contamination
- Keep the Food Safety Plan and Cleaning Schedule updated
- Review often to keep it relevant
- Primary interlocutor to the food inspector during surprise visits
- Responsible of equipment good working order
- Follow the supplier’s instruction handbook
- Clean thoroughly at the end of each use
- Keep it in good condition by doing minor repairs or adjustment when necessary
- Perform preventive and general maintenance on equipment
- Create, develop and maintain great relationships with suppliers
- Place your orders weekly based on production needs
- Research new suppliers whenever necessary
- Keep in touch with local and seasonal suppliers
- Order & receive supplies
- Order supplies based on production needs so we limit selling out of products
- Always check the delivery timing with suppliers
- When receiving, check that the shipment matches the invoices
- Double check the prices on each invoice
- Check the quality of the products
- Store accordingly
- Create weekly schedule for the kitchen team
- Anticipate busy peaks (stat holidays, sunny days etc.)
- Work around time off and vacation requests
- Make sure we are well staffed for each production day
- Anticipate hiring needs
- Manage the inventory
- Monthly inventory

- Check expiry dates
- FIFO rule
