**SUMMARY**

Under the direction of the Food and Beverage Services Manager and working with the Catering team collaboratively, the Assistant Chef will organize kitchen activities and inspire catering staff through culinary creations that ensure a high-quality and satisfying guest experience for our clients.

**ESSENTIAL DUTIES AND RESPONSIBILITIES**

Under the direction of the Food and Beverage Services Manager, the Head Cook duties will include, but are not limited to:

- Provide support not limited only to Suites, Catering and Banquets but also to all activations and activities that define the Food and Beverage as an operational needs.
- Assist Head Chef build menus with new or existing culinary creations ensuring the variety and quality of the portions.
- Perform and execute operations as responsible figure under Head Chef’s guidelines in his absence.
- Ensure uniform serving sizes, quality of offerings and freshness of all ingredients.
- Execute developed recipes and determine optimal presentation of food dishes to clients and guests.
- Responsible for the daily preparation of food items at various stations in the kitchen.
- Set up station according to pre-determined guidelines.
- Assist Head Chef train and develop all new kitchen hires to meet Westerner Park food standards and expectations.
- Follow proper reporting procedures for accidents and incidents to ensure follow-up and prevention.
- Assist the Head Chef in responding to employee inquiries regarding food preparation, storage, spoilage, sanitation, etc.
- Has understanding and knowledge to properly use and maintain all equipment in station.
- Stay productive at all times and prepare for future needs as time allows.
- Ensure cleanliness of kitchen and that employees are trained to AHS standards.
- Effective daily communication meetings to ensure clear and consistent understanding of the daily or event objectives.
- Assist Line Cook II, dishwasher, casual team in daily kitchen routines and work as prime liaison between casual and full-time team members.
- Work with Head Chef for any concession’s food requirements.
- Assist with maintaining temperature records, ordering and work with warehouse for effective inventory management.
- Assist Head Chef with weekly inventory, including counting and recording.
- Balance operational and administrative needs.
- Work with all positions Food and Beverage to ensure proper set up information, special requests, allergies etc. are communicated and executed in best operational interests.
- Actively interact with guests at functions during live stations etc.
- Be there for team questions and resourceful solutions.
- Act and adapt last minute changes and focus calmly on executing those changes professionally to ensure front of the house and back of the house operational success.
- Ensuring food costs and kitchen wastages are monitored and documented where applicable.
- Assist Head Chef in scheduling of kitchen staff and catering staff to production levels and within budget.
- Responsible for overall maintaining equipment wear and tear requests, cleaning etc. in LC1 Kitchen and all other food activations that involve live stations and as per quoted by Head Chef and reporting manager.
- Other duties as assigned by Head Chef and reporting manager.

**QUALIFICATION AND REQUIREMENTS**
- Basic supervisory skills, capable of motivating, leading, and developing associates
- Must possess good organizational, communication and problems solving and decision-making skills
- 3-5 years’ experience in a Kitchen environment as a cook or chef preferably with catering focus
- WHMIS certification is required
- Computer skills are required including knowledge of Microsoft Word and Excel
- Able to work flexible hours to accommodate business requirements, will require evening and weekend work schedules
- Basic accounting knowledge is an asset

**WORK ENVIRONMENT**
- Occasional lifting to 23 kg., repetitive arm, hand and finger movements, occasional bending and reaching
- Sense of taste, smell, and hearing is required as well as adequate visual acuity
- Ability to stand for long periods of time
- Given Westerner Park is in the Major Events industry, this individual will need the ability to be adaptable and flexible with their time. Work will include evenings and/or weekend shifts as event volume dictates.
