After two years filled with accomplishments, including the menu design for our new restaurant and a highly successful banquets program, our Executive Chef is relocating. We are now looking for an exceptional individual to take over this position and continue mentoring and inspiring our kitchen team towards culinary excellence.
Located in Victoria’s beautiful inner harbour, Hotel Grand Pacific is an independent property home to the gorgeous Fathom Restaurant, 10000 square feet of function space, and the cozy Courtyard Café.
**Key Duties & Responsibilities**:
- Oversee food production for F&B outlets including Fathom, banquets, café, and off-site promotional events
- Supervise all Kitchen operations to ensure the highest quality and presentation of foods
- Oversee menu design and develop recipes and food presentation specs
- Recruit and train new Kitchen staff as required
- Lead the development of Kitchen staff by providing ongoing mentorship, feedback and encouragement
- Foster and maintain an excellent team culture that aligns with company values
- Complete scheduling and payroll submission for Kitchen staff
- Maintain a signature presence in local culinary initiatives promoting Fathom and Hotel Grand Pacific
- Prepare the annual budget
- Control all stock in the Kitchen, ensuring maximum use and minimum waste
- Monitor the quality and safety of Kitchen tools and equipment
- Ensure health and safety protocols are consistently adhered to by Kitchen staff.
**What We’re Looking For**:
- At least 10 years of culinary experience, with a minimum 3 years of recent Banquets experience
- A hands-on leader with at least 5 years of recent management experience
- Previous experience in a 4 or 5-star hotel
- Red Seal Certification and Food Safe Certification required
- Professional and effective verbal/written communication skills
- Able to combine strategic, business-focused thinking with creative culinary skills
- Ability to effectively delegate
- Accountable and professional with a high level of integrity
- Willing to work flexible hours.
