Artisan Bread Baker Job Description

**Riviera Italian Bakery**is seeking a passionate and skilled **Artisan Bread Baker** to join our dedicated team. As an Artisan Bread Baker, you will be responsible for crafting high-quality, handcrafted breads using traditional techniques and focusing on exceptional flavor, texture, and appearance.

**Responsibilities**:

- Prepare a variety of artisan breads, including sourdoughs, baguettes, ciabatta, and other specialty loaves, from scratch.
- Accurately measure and mix ingredients according to established recipes and techniques.
- Develop and maintain sourdough starters and other pre-ferments.
- Master various dough handling techniques, including kneading, shaping, and scoring.
- Control fermentation times and temperatures to achieve optimal flavor development.
- Monitor the baking process, adjusting oven temperatures and baking times as needed to ensure consistent and high-quality results.
- Ensure proper cooling and storage of finished bread products.
- Maintain a clean and organized work environment, adhering to food safety and sanitation standards.
- Present finished bread products attractively for display and sale.

**Qualifications**:

- Proven experience as a bread baker, with a strong focus on artisan bread production (typically 2+ years).
- In-depth knowledge of bread-making processes, including dough chemistry, fermentation, and baking techniques.
- Proficiency in working with various types of flours, starters, and other bread ingredients.
- Excellent hand-eye coordination and manual dexterity for kneading and shaping dough.
- Strong attention to detail and precision in measurements and recipe execution.
- Excellent time management and organizational skills to manage production schedules.
- Knowledge of food safety and hygiene regulations.
- Ability to lift and carry heavy bags of flour and other ingredients (up to 50 lbs).
- Passion for artisan bread baking and a commitment to quality.

**Skills**:

- **Technical Skills**: Baking techniques, dough mixing, bread shaping, scoring, proofing, scaling ingredients, operating commercial mixers and ovens, temperature control, fermentation management.
