The Role - Kitchen Operations Manager

This position is responsible for general oversight of kitchen operations for all locations. A TurF BOH Operations Manager is expected to lead by example and empower their teams in their own unique way. In this role, you will build and lead an incredible team of enthusiastic and passionate, chefs, prep cooks, bakers and floor staff. You will inspire, motivate, and develop your team, helping them grow both personally and professionally by exhibiting the TurF core values in all that you do. A BOH Manager will ensure smooth daily running of both kitchens to provide optimal customer experience at all times and the highest level of customer satisfaction.

**Responsibilities**:

- Supporting menu development (weekly specials, grab and go items, daily soups, and seasonal menu roll out)
- Managing and overseeing the food ordering process and ensuring they reduce food costs wherever possible and maintain a positive relationship with all food suppliers
- Hiring and development of the TurF Kitchen Team - providing ongoing and consistent feedback/coaching on leadership, performance, and food quality.
- Overseeing the operations of our commissary kitchen and working closely with the Commissary Operations Manager to ensure our wholesale, prep and baking operations are efficient and highly effective
- Managing the execution, experience and performance of the bistro by ensuring the kitchens are supported to run smoothly in day-to-day operations.
- Emulating the culture at TurF - developing self, eating plants, spending time in the studio + passionate about the shop.
- Supporting human resource functions for BOH staff and developing current systems (employee engagement, employee development, performance management and annual reviews, job descriptions, etc.)
- Creating an inspiring and inclusive work environment reflective of the brand
- Preparing high quality dishes and maintaining the quality of all food leaving the kitchen at all times of service
- Providing a high level of leadership to kitchen staff - delegation, communication, influence, support, passion, empathy etc.
- Ensuring food health and safety guidelines are always followed and team is up to date on food safety certification and handling
- Leading the development of standardized systems to improve all functions of the kitchen - cleanliness, food waste, labour, etc.
- Creating the BOH weekly labour schedule, giving employees two weeks’ notice of their schedules
- Leading the TurF Fridge operations, ensuring consistent, high quality products as well as outsourced products that align with our brand
- Creating and maintaining a waste management program all locations
- Creating, maintaining and analyzing cost margins (food, labour etc.) with a specific goal of minimizing labour hours in the kits kitchen as well as the commissary while still maintaining food excellence.

The job of the BOH Manager requires 40 hours a week with the possibility of some overtime. Approximately 24 hours are expected in scheduled floor shifts (line - prep etc) with the other hours being allocated towards admin, ordering, overseeing, weekly menu development, one on ones or other important projects.

Who You Are
- Has minimum 5+ years of experience in a fast-paced environment
- Has a deep passion for seasonal, ingredient driven food, which is based around local and organic farming that utilizes everything to its full potential
- Has strong principals regarding proper cooking techniques and an eye for detail
- Keen understanding of nutrition, and healthy living
- Excellent leadership skills - communication, problem solving and people management
- Understands basic baking techniques
- Culinary school education is an asset although not necessary
