We are seeking a highly skilled Executive Culinary Director to join our team at Charcut Roast House.

The ideal candidate will have a minimum of 5 years of experience in a similar role and possess excellent leadership skills, with the ability to supervise a team of more than 20 people. Strong communication and interpersonal skills are essential, as is the ability to work under pressure and maintain attention to detail.

Salary: $80,000 - $110,000 per year, depending on experience.

Job Responsibilities
  • Maintain records of food costs, consumption, sales, and inventory.
  • Analyze operating costs and other data to ensure the highest standards of quality and efficiency.
  • Demonstrate new cooking techniques and equipment to the kitchen staff, ensuring they are up-to-date with the latest culinary trends.
  • Supervise the activities of specialist chefs, chefs, cooks, and other kitchen workers, providing guidance and support as needed.
  • Create new recipes and menus that showcase the best of seasonal ingredients.
  • Instruct cooks in preparation, cooking, garnishing, and presentation of food, ensuring that every dish meets our high standards.
  • Prepare and cook complete meals and specialty foods for events such as banquets and private functions.
  • Requisition food and kitchen supplies, arranging for equipment purchases and repairs as necessary.
  • Consult with clients regarding weddings, banquets, and specialty functions, ensuring their needs are met and exceeded.
  • Plan and direct food preparation and cooking activities, overseeing multiple restaurants if required.
  • Recruit and hire staff, providing training and development opportunities to help them grow within the company.
Requirements
  • A minimum of 5 years of experience in a senior culinary role, preferably in a fine dining or upscale casual setting.
  • Excellent leadership and communication skills, with the ability to motivate and inspire a team.
  • A strong understanding of food safety and hygiene practices, with a proven track record of maintaining high standards.
  • Ability to work under pressure, meeting tight deadlines and handling heavy loads with ease.
  • Familiarity with menu planning, recipe development, and food costing principles.
  • Strong analytical and problem-solving skills, with the ability to interpret data and make informed decisions.
