**Job Summary**
Great Canadian Entertainment is seeking a highly skilled and experienced Senior Chef de Partie to join our culinary team at Elements Casino Victoria. As a key team leader, you will be responsible for executing menu item production with an emphasis on quality and presentation.
**Key Responsibilities:**
- Provide direct supervision to the culinary operation at the site level, ensuring seamless execution of menu items and maintaining high standards of quality and presentation.
- Assist in developing performance objectives and provide input on team member performance evaluations, fostering a culture of excellence and continuous improvement.
- Supervise culinary team on a shift basis, assigning tasks and conducting timesheet administration to ensure efficient labor management.
- Lead team members by example in preparing, cooking, and presenting menu items in a timely fashion, adhering to standardized recipes and maintaining a clean and safe kitchen environment.
- Manage ordering and month-end inventories, ensuring accurate stock levels and minimizing waste.
- Ensure compliance with all licensing laws, health and safety regulations, and other statutory requirements, maintaining a safe and healthy work environment.
- Assist the Regional Executive Chef in developing daily specials and contributing to menu development, staying up-to-date with culinary trends and innovations.
- Assist in maintaining budgeted labor and food costs, analyzing data and implementing strategies to optimize profitability.
- Perform other duties as assigned or directed, demonstrating flexibility and adaptability in a fast-paced kitchen environment.
**Requirements:**
- Minimum 3 years of progressive culinary supervisory experience, with a strong background in kitchen operations and team leadership.
- Culinary education an asset, with a focus on menu development, kitchen management, and team leadership.
- Red Seal certification an asset, demonstrating expertise in culinary arts and kitchen management.
- Level 1 Food Safe Certification required, ensuring a strong understanding of food safety and handling practices.
- Demonstrated ability to lead by example, with strong interpersonal and communication skills, and a commitment to teamwork and collaboration.
- The ability to successfully obtain a Criminal Record Check, ensuring a safe and secure work environment.
- Prior experience working with Optimum Control an asset, with a working knowledge of inventory management systems and MS Office.
- Strong attention to detail and ability to work without direction, with a focus on quality and presentation.
