About the Role:

We are seeking an experienced and skilled First Cook to join our culinary team at Pomeroy Kananaskis Mountain Lodge. As a First Cook, you will be responsible for preparing and cooking complete meals, individual dishes, and foods, as well as planning and directing food preparation and cooking activities in a restaurant establishment.

Key Responsibilities:

  • Prepare and cook complete meals, individual dishes, and foods to the highest quality standards.
  • Plan and direct food preparation and cooking activities to ensure efficient and effective operations.
  • Maintain inventory and records of food, supplies, and equipment to ensure optimal stock levels and minimize waste.
  • Supervise the activities of junior cooks and kitchen staff to ensure smooth and safe operations.
  • Collaborate with the Chef de Partie to create new recipes and menus that meet the needs of our guests.
  • Enforce strict health and hygiene standards in the kitchen and follow all relevant health and safety protocols.
  • Monitor portion and waste control to maintain profit margins and ensure the highest levels of guest satisfaction.
  • Ensure that the production, preparation, and presentation of food are of the highest quality at all times.
  • Develop and maintain a positive and productive team culture that promotes excellent service and quality food.

Requirements:

  • Completion of an apprenticeship program for cooks or completion of a college or other program in cooking is an asset to this position.
  • 1-2 years of commercial cooking experience, preferably in a similar role.
