Job Title: Après Second Cook

The Après Second Cook is a vital member of our kitchen team, responsible for producing a significant portion of our daily menu items. This role is ideal for individuals who are passionate about cooking and working collaboratively in a fast-paced environment.

Key Responsibilities:
  • Work closely with the sous chef and 1st Cook to ensure seamless kitchen operations
  • Prioritize and manage prep lists and ordering to maintain efficient inventory levels
  • Process incoming bills and coordinate timing of pick-ups to minimize delays
  • Maintain optimal prep levels, adjusting to busy and slow days as needed
  • Ensure the restaurant line is stocked with adequate backup supplies
  • Utilize raw by-products, leftovers, and extras to create cost-effective specials and soups
  • Develop a thorough understanding of our menu and recipes to ensure accurate preparation
  • Assist the dishwasher as needed to maintain a clean and safe kitchen environment
  • Monitor food storage conditions to prevent spoilage and contamination
  • Estimate food quantities to prepare and cook within specified guidelines
  • Select and apply spices, herbs, and condiments to enhance flavor profiles
  • Prepare basic stocks and sauces to support menu items
  • Produce high-quality food with correct taste, temperature, and visual appeal under supervisor guidance
  • Identify and utilize kitchen equipment correctly, reporting malfunctions to the sous chef
  • Provide clear instructions to 3rd cooks and dishwashers as needed
  • Demonstrate a strong understanding of all menus, recipes, and standards for the area
  • Anticipate potential kitchen needs, such as defrosting and ordering, to prevent shortages
  • Understand the concept of food costing and contribution to menu items
Job Qualifications:
  • Must possess speed and efficiency in processing various food types, combined with basic cooking skills
  • Minimum three years of cooking experience required
  • Ability to cook steaks to desired doneness
  • Knowledge of various cooking methods and soups/sauces
