Key Responsibilities
  • Carving carcasses, sides, and quarters of meat
  • Trimming and preparing standard cuts of meat
  • Wrapping and packaging prepared meat products
  • Removing bones from various meats
  • Segmenting poultry into parts
  • Cleaning and preparing fish and shellfish
  • Grinding different types of meat
  • Slicing cooked meats for service
  • Shaping, lacing, and tying roasts, as well as other meats, poultry, and seafood
