Assistant Culinary Leader
We are seeking a dedicated Assistant Culinary Leader to elevate our food and beverage services. The Assistant Culinary Leader plays a crucial role in supporting the Executive Chef and stepping in during their absence. This position involves training new kitchen staff and overseeing the culinary team. The ideal candidate must possess quick decision-making skills, creativity, and the ability to develop innovative concepts for our dining and banquet services.
The Assistant Culinary Leader is expected to be hands-on, actively participating in daily kitchen operations while collaborating closely with the Executive Chef to fulfill the culinary vision of the hotel. A strong understanding of current food and beverage trends is essential, along with a passion for creating outstanding dining experiences. This role requires expertise in preparing a variety of menu items, ensuring that production standards are consistently met, and maintaining high levels of food quality, flavor, and presentation to guarantee guest satisfaction.

Key Responsibilities
- Demonstrate leadership in the kitchen by setting a professional example for team members.
- Prepare individual dishes and full-course meals with precision.
- Utilize specialized cooking equipment and adhere to food safety standards.
- Ensure food quality, flavor, and presentation meet guest expectations.
- Produce high-quality food consistently while minimizing waste and working independently.
- Accommodate customers with dietary restrictions and allergies.
- Communicate any kitchen issues promptly to the Executive Chef.
- Maintain quality control and timely food preparation.
- Exhibit strong organizational and multitasking abilities.
- Ensure cleanliness and functionality of kitchen work areas and equipment.
- Organize daily BEOs and oversee prep and production for all menu items.
- Familiarize yourself with all kitchen equipment operations.
- Assist in managing daily kitchen operations.
- Control food costs by monitoring production and reducing waste.
- Consult with the Executive Chef regarding menus, specials, and event preparations.
- Monitor production standards to ensure efficient service and adherence to brand quality.
- Assist with ordering, inventory management, and food safety compliance.
- Ensure preparation levels are met for upcoming services.
- Organize and maintain cleanliness in storage areas and dishwashing stations.
- Perform additional duties as assigned.

- Completion of a post-secondary culinary program is preferred.
- Current Food Safe Certification is required.

- Proven time management skills and the ability to thrive under pressure.
- Capacity to work in a fast-paced environment.
- Ability to perform moderate physical tasks, including lifting up to 50 lbs.
- Willingness to stand or walk for extended periods.
- Availability to work various shifts, including evenings and weekends.
- Must be legally authorized to work in Canada.
