JOB SUMMARY:

The Sous Chef plays a vital role in ensuring the smooth operation of the kitchen at Whitewater Ski Resort. Reporting directly to the Head Chef, this individual will assist with menu planning, ordering, and inventory management, while also coordinating staff duties, food preparation, and general administration tasks.

Key Responsibilities:

  1. Assist with scheduling, food preparation, quality, consistency, cleanliness, and sanitation of work areas and equipment to meet and exceed established standards.
  2. Act as team lead in the absence of the Chef and ensure kitchen procedures are carried out completely for each shift.
  3. Work to achieve department Key Performance Indicators (KPIs) to assist in achieving organizational goals by communicating them and holding staff accountable to them.
  4. Embrace, promote, and follow Whitewater's mission statement and values.
  5. Champion a sustainable approach in daily operations.
  6. Communicate daily with staff about mountain events, OH&S & Supervisor meeting topics, staff stoke, and any other topics that need to be shared with staff.
  7. Manage cost of goods and services by detailed ordering and inventory management.
  8. Control waste to help hit KPI's.
  9. Ensure food is received, stored, handled, and prepared in a hygienic and Food Safe compliant manner.
  10. Coordinate morning prep list completion and front-line set up.
  11. Ensure customers receive friendly and efficient service.
  12. Assist with menu planning, including specials, soups, salads, and catering events.
  13. Constantly monitor prepped food levels and supplies.
  14. Prepare prep list according to anticipated volumes.
  15. Complete freezer pull list according to anticipated volumes.
  16. Ensure that temperature and sanitizer logs are completed daily.
  17. Ensure Whitewater Food Safe Policy is followed by all kitchen staff.
  18. Keep a clean, organized, and safe working area at all times.
  19. Implement all risk management procedures as per Whitewater Ski Resort.
  20. Promote Whitewater's safety culture by reviewing and amending where necessary but not limited to: Department Manuals, CDPP, Employee Handbook.
  21. Maintain current knowledge of legal standards pertaining to equipment, safety regulations, and OHS practices.
  22. Perform other related duties, tasks, and responsibilities as required from time to time.

Required Qualifications/Education:

  1. 1-2 years previous experience in a food preparation role in a professional dining establishment.
  2. Previous experience leading a line and ensuring food and presentation standards are maintained.
  3. Culinary training, education, or diploma is an asset.
  4. Food Safe or other food handling certification is an asset.

  1. Superior communication skills, including the ability to retain, coach, mentor, and develop staff.
  2. Ability to multitask in a fast-paced environment.
  3. Demonstrated passion for high-quality culinary practices.
  4. Leadership and supervisor experience is an asset.
  5. Mature and reliable.
  6. Must be self-motivated and be able to motivate a team.
  7. Strong organizational and time management skills with the ability to multi-task and coordinate multiple functions and activities.
  8. Possesses knowledge and understanding of employment standards.
  9. Ability to effectively use business software, including Microsoft Office suite, Google apps, or familiar with catering software systems, is an asset.
  10. Must be able to lift 50 pounds.
