Position Overview

Under the guidance of the Executive Sous Chef, the Pastry Sous Chef is tasked with overseeing the preparation and presentation of pastry items, ensuring adherence to all culinary standards and safety protocols. This role is vital in maintaining an efficient kitchen environment while upholding the highest standards of culinary excellence and brand integrity. The Pastry Sous Chef collaborates closely with the culinary management team to ensure the successful execution of pastry and dessert offerings.

Key Responsibilities

  • Develop, prepare, and showcase pastry and dessert creations in line with Great Canadian Entertainment's brand standards.
  • Guarantee that all pastry items meet established quality benchmarks for flavor, texture, and visual appeal.
  • Maintain a tidy, organized, and hygienic workstation, strictly following health and safety guidelines.
  • Monitor stock levels, communicate food product needs, and ensure proper storage and labeling practices.
  • Prepare ingredients for high-volume production efficiently.
  • Support Demi Chefs with product receiving, storage, and inventory management.
  • Clean culinary tools and assist with dishwashing duties as required.
  • Innovate and implement effective work processes to enhance productivity and minimize waste.
  • Adhere to portion control and waste reduction protocols.
  • Follow proper cooling methods and maintain appropriate refrigeration temperatures.
  • Report any needs or issues to the Culinary Management promptly.
  • Communicate effectively with all relevant operational departments.
  • Foster collaborative relationships with all stakeholders.
  • Ensure compliance with licensing regulations, health and safety standards, and other legal requirements.
  • Perform additional duties as assigned.

Qualifications and Skills

  • Availability to work up to 40 hours per week across various shifts, including early mornings, evenings, and weekends.
  • Minimum of 2 years of progressive culinary experience, with a focus on pastry.
  • At least 1 year of supervisory experience in a culinary setting.
  • High School Diploma; post-secondary education in Culinary Arts or a related field is preferred.
  • RED SEAL certification or current enrollment in the program is advantageous.
  • Level 1 Food Safe certification is required.
  • Ability to successfully pass a Criminal Record Check.
  • Proven ability to exceed customer expectations through effective communication.
  • Proficient in MS Office applications.
  • Capable of thriving in a fast-paced environment and managing multiple deadlines with attention to detail.
  • Strong interpersonal and verbal communication skills.
  • Excellent organizational abilities, including effective planning and the capacity to work independently.
