**What you will be doing**:
In this newly created role, the Junior Product Development Chef will report directly to the Food Innovation and Technology Manager and be responsible for executing recipe and product development to follow our innovation calendar and recipe development outlines. This role covers the entire R+D lifecycle from ideation to product commercialization, including a competitive review, concept approval, cooking prototypes, product formulation and documentation (standard recipe, product specification sheet), cost analysis, and approval process by collaborating with the Operations, Purchasing and Production Planning teams.

This role will support development across our house-made product categories and new category innovation. As Product Development Chef, you must enjoy the structure of systematic processes and experimental prototyping. We seek a creative, organized, resourceful recipe/product developer with experience in medium-scale fresh and frozen food production.

**Duties & Responsibilities**:

- Innovating recipes and products to achieve annual innovation calendar and performance goals
- Collaborate with Production Managers & Production Support Managers to implement/commercialize new R&D into production schedule/menu (including training, costing, new product/ingredient setup, packaging, scale-up, batch testing and cascade through teams to launch)
- Adhere to and follow a formalized R&D approval process, including sensory evaluations, consumer insights, competitive costing/product analysis, documented feedback, labour impacts, and customer-facing directions - all appropriate for our current production model
- Responsible for costing, ingredients, packaging, shelf-life testing, and nutritional analysis of recipes
- Document photographs, weights, versions
- Develop the standardized scaled-up recipe for production
- Coordinate and lead sensory evaluations with key stakeholders
- Liaise with marketing/CD/CCO for approval on retail price, naming, portion size, packaging
- Collaborate on product website photography with marketing team
- Support QA standards and shelf life evaluations to ensure product quality and safety
- Consider “total cost” of the recipe - including labour, processing loss, shelf life
- Collaborate cross-functionally to align recipe lifespan and forecasting - to maximize sales and customer experience while minimizing OOS and surplus inventory positions
- Collaborate on new vendor and new ingredient sourcing - vetting of raw materials to ensure overall products align with Fresh City sourcing guidelines
- Research and bring forward current/new trends, processes, and ingredients as a method to entice customers toward “discovery” and keep Fresh City competitive and differentiated
- Review and assess customer feedback and annual customer happiness survey to identify opportunities for improvement and innovation
- Understand the breadth of our customer base and their varying needs to help inform R&D and a menu that applies to multiple customer personas (# in household, income/budget, dietary lens/priorities/needs, kids, customization, convenience, nutritional profile)

**Requirements**:

- you’re obsessed with all things food
- 1+ years of experience as a commercial food/recipe product developer
- 2+ years of experience working in food production/manufacturing - ideally with experience in frozen model and medium-scale food production equipment/processes
- Excel in working and communicating cross-functionally
- 2+ years of project management experience - including project scoping, documentation, workback timeline, dependencies, stakeholdering, result tracking, post-mortem
- You have a culinary training/certification
- Able to conduct sensory evaluations and production handling of all Fresh City recipes (including meat, dairy, nuts, sesame, wheat/gluten, eggs, fish/seafood, mustard, and soy)
- Experience with nutritional analysis, costing programs, CFIA food labelling requirements
- Knowledge in GMPs, HACCP and health and safety standards is preferred
- Strong proficiency in computer programs such as Microsoft Office (Outlook, PowerPoint, Word, Excel), Google Suite, and WM
