Butcher (Portion Cutter)

**About the Role**: We are seeking a skilled Butcher / Portion Cutter to join our team. In this role, you will be responsible for preparing meat products to customer specifications, cutting and trimming wholesale portions into steaks, chops, roasts, and more. You will play a crucial role in ensuring our customers receive top-quality cuts every time.
**Key Responsibilities**:
- Cut, trim, bone, and tie meats such as beef, pork, lamb, and poultry to meet customer specifications.
- Prepare standard cuts of meat, remove bones, and create special meat orders and displays.
- Shape, lace, and tie roasts and other meat cuts using boning knives and twine.
- Receive, inspect, and store meat deliveries, ensuring quality standards are met.
- Maintain a clean, safe, and organized work environment.
**Requirements**:
- Experience with raw materials, production processes, and quality control.
- Proficiency in knife and band saw techniques.
- Excellent hand-eye coordination and ability to handle tools safely and effectively.
- Ability to work with precision, keeping the hand and arm steady during cutting.
- Strong problem-solving skills and ability to work well under pressure.
- Ability to work in a fast-paced environment and stand for long periods.
**Working Conditions**:
- Work in cold temperatures (-10/+4 degrees Celsius).
- Ability to push, pull, and lift up to 70 lbs.

The butcher/ Portion Cutter is responsible for ensuring that orders are cut to the specifications as per the Order from the Customer Service Department. Butchers cut and trim meat from larger, wholesale portions into steaks, chops, roasts, and other cuts.
