JOB DESCRIPTION:
Lead Chef in the daily operations of the kitchen.
**DUTIES AND RESPONSIBILITIES**
- Lead chef in the daily operations of the kitchen
- Responsible for the overall operations of the kitchen including Bistro, Halfway House and all applicable non-golf related functions
- Hiring and disciplinary actions
- Ensure that the food costs and labour costs are within budgets in liason with the Director of Operations
- Responsible for the ordering, inventory and labour control
- Responsible for the control of sanitation and waste management
- Ensure that the customer receives the highest of satisfaction and an enjoyable meal
- Maintain an open line of communication with all departments to ensure continued success
- Continue to help in the training and education of staff
- Be outgoing and engaging to interact with customers
**EDUCATION, CERTIFICATION, & EXPERIENCE REQUIREMENTS**:
- 5 - 8 years management experience in both a la carte and banquet kitchens
- Certificate of qualification or equivalent work experience
**QUALIFICATIONS/SKILLS**:
- Strong leadership skills
- Strong background in human resources and on going development of staff
- Knowledge of costing and inventory
- Knowledge of logistics and purchasing
- Broad knowledge of nutrition and dietary requirements
- Pleasant work ethic with the emphasis on the overall enjoyment of the guest
- Strong communication and inter departmental skills
- Leadership and motivational skills an asset.
- Ability to track stock levels and invoicing for products received
- Must be motivated, confident and enthusiastic
**WORKING CONDITIONS**:
- Full-time year-round employment.
- Evening and weekend work required during peak season, emergencies, and special projects.
**Salary**: $60,000.00-$75,000.00 per year
