**Job Scope**:
Reporting to the Principal Scientist, the Dairy Research Scientist plays a crucial role in the development of dairy products (fermented and non-fermented) from conceptualization to prototype and full-scale production. This position is responsible for employing the latest scientific and technical knowledge in food science with respect to dairy fermentation processes and related technologies.

**Key Responsibilities**:

- Identify, evaluate and approve new ingredients, ensuring compliance with formulations and optimal functionality.
- Conduct experiments in laboratory and pilot settings, collaborating closely with RD Lab staff to innovate new products and testing methods.
- Scale up prototypes and execute plant trials in coordination with the Principal Scientist.
- Develop and maintain accurate product specifications, encompassing product description, chemistry, sensory aspects, nutrition, and ingredient breakdown.
- Populate and update formulation information on the EPR system.
- Support or create plant trial documentations and actively participate in trial initiatives.
- Review, update, and create Standard Operating Procedures (SOP) in collaboration with the Principal Scientist or Project Lead.
- Design and execute sensory tests and preparing relevant documentation to support research findings.
- Conduct and support the design of shelf-life studies, providing recommendations for specification changes.
- Provide technical expertise in troubleshooting and product-related challenges.
- Collaborate with QC and QA to establish strict protocols ensuring product quality and safety.
- Monitor and assess quality standards, proposing changes for enhanced product quality.
- Conduct in-depth scientific research to address issues in dairy production, processing, and product development as required.
- Explore new technologies, ingredients, and methodologies to improve the quality, safety, and sustainability of dairy products.
- Independently plan and execute projects, demonstrating self-initiative.
- Analyze large datasets, present results in written and verbal formats.
- Develop a good understanding of regulatory standards and SFI labeling practices.
- Efficiently utilize ERP and R&D systems.

**Qualifications**:

- Master of Science in food or related fields.
- 1-3 years of preferred research experience in a food company, particularly in the dairy sector.
- Knowledgeable in dairy ingredients and manufacturing processes.
- Strong multitasking and prioritization skills with the ability to meet deadlines.
- Excellent organizational skills for efficient task execution.
- Flexibility in schedules, capable of working irregular hours as per business needs.
- Ability to work effectively in a culturally diverse team.
- Possession of a car and a valid driver's license for Ontario
