Company Introduction: T&T Supermarket Inc. was founded in 1993 with two stores in BC. Since then, it has expanded rapidly and is now Canada’s largest Asian supermarket chain with 31 stores across the country: 13 in BC, 7 in Alberta, 10 in Ontario, and 1 in Quebec. The Company’s continuous expansion is going to bring more new stores in the next couple of years.

The Role: Reporting to the Sushi Technical Specialist and the assigned store’s Department Head, the Sushi Chef Trainee will undergo an intensive training program of approximately 13 weeks for the purpose of familiarizing with the operation know-how, department daily routines, management development techniques, and learn how to run a department with profit and loss accountabilities. Upon satisfactory completion of the Sushi Chef Trainee Program, the trainee will then assume Sushi Chef’s responsibilities of the assigned department based on their assessment results and to provide support to the assigned Department Heads and Store Managers.

Sushi Chef Trainee will be trained to deliver major responsibilities of Sushi Chef, which include making sushi based on orders received, control quality, inventory and wastage as well as supervising his/her team in ensuring daily Sushi production and working conditions are compiled to corporate policies and other statutory requirements.. S/he is also responsible for managing, disciplining, providing guidance and training to Sushi Production Assistants at the assigned store.

Major Responsibilities: 1. Create high quality sushi including cooking rice, rolling sushi, temperature recording, cutting and packaging for plate preparation

2. Ensure product quality, food safety, freshness, operating standards and ensure FIFO is strictly practiced within the department

3. Maintain cleanliness and organization of sushi station

4. Keep product display full, attractive and neat, timely replenish inventory, if necessary

5. Follow procedures to verify and process expired sushi products and manage shrinkage

6. Receive products delivered, take customers’ orders

7. Ensure daily sales and other checklists are properly completed

8. Perform any other duties as assigned by the superior

Knowledge, Skills and Ability Requirements: 1. Possess 3 years and/or above relevant experience, with at least 3 years of supervisory experience preferred

2. Ability to deliver Sushi Production research and development

3. Flexible to work in shifts, including weekdays, weekends, evening hours and statutory holidays

4. Have knowledge and experience in supervising Kitchen Deli production workflow and controlling cost and wastage

5. Ability to manage and train employees

6. Able to communicate in English and Chinese (Cantonese &/or Mandarin)

7. Have a good understanding of tools & equipment relevant to the job and know how to interpret labels of merchandise
