**Job Overview**

**ESSENTIAL DUTIES AND RESPONSIBILITIES**:

- Update inventory sheets with prices and distribute blank inventory sheets to inventory departments/staff. Include uploading kitchen inventories to the iPad for kitchens
- Some stress resulting from daily guest interactions (internal and external), budgetary, and time constraints
- Other job related duties may be assigned
- Observe inventory counts and/or do spot-checks as required
- Maintain all inventory records including perpetual inventory
- Calculate cost of sales after monthly physical inventories are carried out
- Analyze inventory consumption in all outlets, investigate variances in cost of sales and inventories
- Prepare periodical Food and Beverage cost reports, after making journal entries to adjust inventory balances, inter-departmental transfers
- Ensure all journal entries and reports are ready for monthly financial closing
- Monitor all inter-departmental transfers
- Ensure all purchases made during the fiscal month are accounted for in calculating monthly cost of sales
- Compare and reconcile purchases between ‘Daily Receiving Reports’ and ‘General Ledger’
- Calculates staff meal costs
- Ensure all internal control procedures established are strictly adhered to and advises the Finance and Accounting Manager and/or Food and Beverage Manager on new procedure as required
- Establish par stocks in all outlets and ensure par-stocks are maintained in all outlets
- Check costings of food and beverage recipes and develop standard costs for food and beverage
- Program menu items and prices
- Monitor spoilage, expiry dates, prices and inventory levels in the kitchen, main storage and in all other outlets
- Investigate adverse variances in cost of sales, inventory costs and expenses as required by the Finance and Accounting Manager and/or Food and Beverage Manager
- Maintain inventory and cost control records of the resort
- Collect weekly bar inventories and create requisitions for stock replenishments according to par level
- Carry out surprise checks on goods received for quality, quantity and prices
- Carry out market survey of quality and prices of various products purchased for the resort
- Ensure Food and Beverage revenues are reflected accurately in the Daily Revenue report
- Monitor all internal audit requirements for accuracy and report any variations to the Finance and Accounting Manager
- Work closely with the Shipping and Receiving department to ensure and maintain the storage areas are in a clean and secure manner. Report any and all issues to Executive Chef or Executive Sous Chef

**EDUCATION, EXPERIENCE AND SKILLS**:

- Minimum 2 years experience in hotel or resort Food and Beverage operations
- Minimum 1 year education in finance
- An equivalent combination of education and experience may be considered.
- Computer experience preferred, specifically in Microsoft Office, Optimum and Micros
- Previous accounting or bookkeeping experience is preferred
- Previous inventory experience is preferred
- Strong understanding of recipe cost control and portion control
- Excellent communication skills
- Excellent problem solving skills
- Willing and able to assist with inventory as required
- OFA Level 3 - Advanced First Aid preferred
- Being multi lingual is an asset.
- Flexible to a changing schedule specifically at month end and year end
