We are seeking a passionate Chef de Partie to expand and grow our culinary team and presence within Edmonton. We are seeking dynamic team players that welcome a challenge to build, improve and a desire to make their mark on the development within the kitchen settings.

This position will assist the Executive Chef managing and supervising food production of the Hotel and in which areas food production takes place in such a way that Hotel standards are achieved and are consistently improving. To establish new products and assist in the development of menu recipes and standards for a continually evolving menu.

Duties and Responsibilities:

- Follows all established and future kitchen Standard and Operating Procedures.
- Reviews the daily production sheets. Lists all items to be prepped on clipboard and updates on a daily basis.
- Prepares lists of food products required for Chef to order on approval.
- Ensures that station opening and closing procedures are completed.
- Keeps overproduction and food waste to a minimum. Ensures proper rotation, labeling, and storing of food in order to reduce food cost, expense and waste.
- Ensures that all food products are handled, stored, prepared and served safely in accordance with hotel and government Food Safety guidelines.
- Reports any and all deficiencies in kitchen equipment functionality and quality of food products to Chef in a timely fashion.
- Executes monthly and/or daily specials, working closely with Chef to cross utilize product and eliminate waste.
- Keeps work station clean and organized; including fridges/ freezers, countertops and stove tops.
- Practices the "clean as you go" philosophy.
- Assists Chef with menu planning for the outlets.
- Ensures all hotel & kitchen spirit standards are being followed. Assists with training and coaching as required.
- Monitors par levels of Sport Bar on a daily basis and ensures easy to follow instructions are given to get the jobs done
- Checks banquet functions every day.
- Communicates upcoming events to associates in hotel, such as large groups in house, teams, conferences, etc.
- Observes and practices a high standard of cleanliness and promotes safety within the kitchen.
- Ensures the quality & quantity of food meets hotel standards.
- Researches and has knowledge of new cooking methods and trends.

**Education **& **Qualifications**:

- Completion of diploma in Culinary Arts; Journeyman Red Seal Certification preferred
- 2-4 years of Kitchen experience within a hotel environment
- Proven leadership qualities
- Highly driven, motivated and action driven
- Strong organizational and time management skills
- Excellent team player with a positive attitude
- Highly creative and current to culinary trends
- Proven ability to deal with pressure and time deadlines;
- Demonstrates thorough knowledge of hot and cold food preparation;
- Demonstrates good working knowledge of accepted sanitation standards and applicable health codes;
- Demonstrates mathematical skills necessary to understand recipes, measurements, requisition amounts portion sizes as well as budgetary analysis capabilities;
- Career driven
- Interest in long-term commitment
- Must read, write and speak English

**Working Conditions**:

- Must be able to lift 30 lbs. on a regular and continuing basis;
- Must be able to carry over 20 lbs
- Must be able to push and pull carts and equipment weighing up to 150 lbs;
- Must be able to exert well-paced ability in limited space and reach other locations of the hotel in a timely basis;
- Must be flexible and available to work various shifts including nights and weekends
- lifting - under 20 lbs 50% of work time; carrying over 20 lbs 10% of work time

**Job Types**: Full-time, Permanent

**Salary**: $18.00-$20.00 per hour
