Le Directeur adjoint restauration assiste le directeur restauration dans la planification, l'organisation, la direction et le contrôle de l'exploitation de la cuisine afin d'assurer l'atteinte des standards de qualité et de sécurité.
Rôles et responsabilités
Gestion
Contribuer à la création, la planification et la préparation des menus pour la restauration ;
Assister le directeur de la restauration dans la gestion des ressources financières (contrôle des coûts et de fonctionnement) matérielles (gestion des quantités à la cuisine et au bar) et la négociation avec les fournisseurs ;
Assister le directeur de la restauration dans la gestion quotidienne des activités de restauration.
Opération
Préparer les mets selon les recettes établies et les demandes de la clientèle;
Aider et assister son équipe en prenant en compte les standards de qualité et de sécurité établies;
Veiller à maintenir un haut niveau de sécurité et d'hygiène des lieux;
Contribuer à entretenir les lieux et les équipements selon les standards de qualité ;
Recevoir, emmagasiner et distribuer les aliments et boissons dans les différents chalets et en assurer la rotation;
Contribuer à un réel climat d'entraide et exercer au besoin les mêmes tâches que les employés du département de la cuisine.
Gestion des ressources humaines
Assister le directeur restauration dans le recrutement (entrevues, sélection, accueil et intégration, formation) de l'équipe restauration;
Participer à la gestion courante du personnel selon les politiques en place;
Superviser le personnel en place lors du montage des salles, planifier la logistique lors d'événements selon les normes établies.
Tâches connexes
Collaborer à la réalisation des banquets;
Remplacer le directeur restauration lors de ses congés.
Collaborer avec les responsables des autres départements selon les besoins;
Toutes autres tâches connexes.
**Qualifications**:
DEP en cuisine ou autre diplôme équivalent
5 ans d'expérience en cuisine
2 ans d'expérience en gestion de personnel
Attestation en hygiène et salubrité (un atout)
Expérience dans les achats
Connaissance des aliments et des boissons, et de l'entreposage
Bilinguisme (français-anglais)
Bonne capacité physique
Compétences personnelles
Habileté interpersonnelle, travail d'équipe et leadership

Sens du jugement et des priorités
Bonne communication

Entregent et dynamisme

Horaire et durée
Poste permanent à temps plein;
Une flexibilité dans l'horaire de travail est nécessaire, inclut la fin de semaine lorsque la montagne est en opération ;
