Position Overview

The Head Butcher at Olliffe Butchers will lead a team dedicated to delivering exceptional quality, innovation, and customer experience. This hands-on leadership role focuses on expert butchery, managing product displays that set the standard for Toronto, and fostering a team environment that prioritizes skill, service, and efficiency.

Key Responsibilities

1. Butchery & Product Excellence
  • Lead all aspects of butchery operations, including breaking, cutting, trimming, and preparing premium beef, pork, lamb, poultry, and specialty cuts.
  • Uphold the highest standards of quality and precision in every cut, ensuring consistent excellence.
  • Develop and execute innovative products, value-added offerings, and seasonal specials to drive sales and customer excitement.
  • Ensure visually stunning, expertly merchandised displays that reflect Olliffe's reputation as Toronto’s finest butcher shop.
2. Leadership & Team Development
  • Train, mentor, and oversee butchers and support staff, fostering a culture of skill development, efficiency, and teamwork.
  • Provide guidance and support to ensure exceptional customer service is delivered at all times.
  • Schedule and manage staffing to maintain productivity during peak periods while ensuring team work-life balance.
3. Customer Experience
  • Engage directly with customers to provide product recommendations, cooking advice, and exceptional service that builds loyalty.
  • Ensure all team members embody Olliffe’s commitment to a superior customer experience.
  • Act as an ambassador for the Olliffe brand, reflecting knowledge, expertise, and passion for premium meats.
4. Inventory, Ordering & Operations
  • Manage inventory control, product rotation, and minimize waste while maximizing product freshness.
  • Coordinate with suppliers and farmers to ensure a consistent supply of the highest quality products.
  • Oversee receiving, storage, and handling to maintain food safety and health standards.
  • Safely operate and maintain all butchery equipment, ensuring compliance with food handling and safety laws.

Qualifications:
  • Minimum 3 years of butchery experience in a high-end retail or culinary environment.
  • Proven expertise in breaking and preparing premium cuts of beef, pork, lamb, and poultry.
  • Demonstrated ability to create innovative products and visually impressive displays.
  • Strong leadership experience, with the ability to motivate and train a team.
  • Exceptional customer service skills with the ability to build lasting relationships.
  • In-depth knowledge of food safety, health, and sanitation standards.
  • Ability to lift up to 50 lbs and work in a cold environment.
  • Valid Food Handler’s Certificate and First Aid Certification are assets.
  • Passion for food, craftsmanship, and the highest levels of quality.
