The General Manager at Kissa Tanto, a Michelin-starred restaurant in Vancouver, plays a pivotal role in ensuring the seamless operation of the establishment. This includes overseeing daily operations, managing staff, and maintaining high service standards to provide an exceptional dining experience. The General Manager is also responsible for financial management, including budgeting and cost control, as well as fostering a positive work environment. They work closely with the culinary team to uphold the restaurant's renowned reputation and ensure the consistency and quality of the dishes served. Additionally, the General Manager handles customer relations, ensuring that guests' needs are met and that their dining experiences are memorable.

Compensation:
Salary of 65K to 75K depending on experience.
Average tips weekly $600 -$800

Points for flight in North America after a year

Duties include the following:

Backend Operations:

  1. Daily cash outs and balancing of tip spreadsheet
  2. Distribution of weekly tips
  3. In collaboration with the Director of Operations you will liaise with bookkeeper over any monetary matters:
  4. Payroll issues i.e. tracking vacation and sick days, missing hours, submission of new employee information.
  5. Review and resolve discrepancies with Clover, Auphan, Tock.
  6. Ensure employee hours are correct on POS and approve daily.
  7. Be aware of COGS percentages and be responsible for ensuring maximum profit and cost control regarding labour, food, and alcohol.
  8. Troubleshoot equipment, plumbing, and electrical issues. Relay problems to ownership if issue needs to resolved through servicing.
  9. Maintain and Update: Food Syllabus - Keep Syllabus update, Allergy Syllabus - Keep Syllabus update, Update Menu on Website with Host.

Correspondence:

  1. Oversee and assist with business email responses.
  2. Reservation requests that office manager is unable to answer – Complaints (Buyout inquiries to be sent to Director of Operations)
  3. Scheduling: To be sent to staff biweekly.

Inventory & Operations:
Ordering is done sparsely with items being ordered once a month at most. You would need to maintain an inventory sheet that is updated bi-weekly.

  1. Hand Soap & Sanitizer Inventory & Ordering
  2. Staples ordering - pens, paper, etc
  3. Linens Management with BOH
  4. Paper (kitchen rolls, FOH rolls, etc) Inventory with BOH
  5. Paper Towels, Toilet Paper, Inventory & Ordering
  6. Light Bulb Purchasing - As Needed

Service:

  1. General environment and space maintained and kept tidy
  2. Atmosphere during service maintained (This is a key element in creating the right mood at Kissa Tanto).
  3. Music volume matched to the sound levels in the room
  4. Lighting dimmed accordingly as sun goes down
  5. Heating and cooling controlled to appropriate levels
  6. Support host by greeting and seating guests, updating Tock site as reservations come in, managing the waitlist, and ensuring maximum capacity without sacrificing guest experience.
  7. Maintain a positive guest experience by troubleshooting any potential issues and working with staff to develop ways to create memorable experiences.
  8. Support staff on the floor during service to minimize service issues.
  9. Ensure all side duties are being fulfilled.
  10. Communicate with the kitchen throughout the night to troubleshoot potential issues.
  11. Help expedite items from behind the line if kitchen is short staffed.
  12. Oversee all tables to ensure that their ordered dishes arrive in a timely manner.
  13. Alert kitchen to any dish inconsistencies to maintain quality control.
  14. Have a comprehensive knowledge regarding the food, cocktails, and wine program to better interaction between guests and yourself as well as have the ability to offer guidance to staff members when needed.
  15. Resolve customer complaints in a professional manner.
  16. Be aware of regulars, VIPs, and industry and manage their experience accordingly.
  17. Closing duties:
    1. Closing all staff, QSA, Void, and Promo tabs
    2. Cash out
    3. Ensure all closing duties have been fulfilled
    4. Lockup

General Duties

  1. Create and implement restaurant systems to streamline operations.
  2. Note anything in terms of physical appearance, cleanliness, organization that needs attention at the restaurant and taking initiative to improve it.
  3. Bring all concerns and critical restaurant decisions to Director of Operations and Ownership to be discussed and rectified.
  4. Participate in weekly meetings with ownership, bar team, and kitchen team regarding service, consistency of quality, and development.
  5. Maintaining and promoting Kissa Tanto culture:
    • Develop and nurture relationships with both BOH and FOH staff, give Positive feedback, and resolve contentious issues between them.
    • Provide a comfortable work environment.
    • Stay cognizant of the general mental health of staff members.
